If you want to cook something delicious and at the same time dietary, low-fat, be sure to try chicken cutlets with zucchini. This dish contains a minimum of calories, but at the same time a large amount of protein, it is juicy, nourishing and looks beautiful. If the cutlets are served with boiled vegetables or a green salad, you will get a wonderful light lunch.

Recipe for chicken cutlets with courgettes

To prepare a large portion of a delicious dish, take:

  • Half a kilo of chicken without skin and bones;
  • 200 g of zucchini pulp;
  • 100 g of boiled rice;
  • 1 carrot and onion;
  • 1 bunch of any greens (parsley, dill, coriander) for minced meat;
  • 1 chicken egg;
  • Salt, black pepper, flour or breadcrumbs for breading.

Rinse the chicken thoroughly, peel the onion and carrots. After scrolling meat and vegetables through a meat grinder, if you want your chicken cutlets with zucchini to become more tender, mincemeat can be turned 2-3 times. Squash on a large grater, season with salt, let them stand for a while, then squeeze out the juice. Combine them with minced meat, add boiled rice, finely chopped greens, egg, salt and pepper. From the resulting meat mass, mold small cutlets, roll them in flour or breadcrumbs, and fry in vegetable oil until golden. Usually, each serving takes 10-15 minutes. After chicken cutlets with zucchini are ready, you can hotly serve them to the table, for example, with sour cream. And as a garnish you can use boiled vegetables or a green salad. By the way, in order to make the dish less caloric, these cutlets can be cooked in a double boiler, in this case they do not need to be crumbled in breading, just mold the form and send it for 20 minutes. Of course, they will be obtained without a crusty crust, but so you can avoid the consumption of fats of sunflower oil and simple carbohydrates, which give us biscuits or flour. By the way, the caloric content of the dish is 87 kcal per 100 g of product, of which 3 g of fats, 7.5 g of protein, and this fits into the dietary framework .

Chopped chicken cutlets with zucchini: recipe with cheese

To prepare a juicy dish of meat and vegetables you will need:

  • 600 gr. Chicken fillet;
  • 1 piece of zucchini and medium-sized bell peppers;
  • 100 grams of any grated cheese;
  • 1 chicken egg;
  • Flour or bread crumbs, vegetable oil and spices.

White meat and pepper finely chop, zucchini and cheese grate on a large grater. The vegetable should be salted and left for a while, it will give the juice, which must be wrung out. Combine the ingredients, add the chicken egg, spices and a couple tablespoons of flour, if the mass is too liquid. Mix well the resulting minced meat, from which you need to form small cutlets. Roll them in breading and fry in vegetable oil. After the dish is ready, serve hot to the table. Chicken cutlets with zucchini and cheese are especially liked by children for their delicate taste and crispy crust, and since this dish is prepared very quickly, even the busiest mother can make it.
