Further it is required to again place the pan on a small fire and gently rub the dough with a spatula until a homogeneous mass is obtained which should become smooth, shiny and easily lag behind the walls of the dishes. After receiving the recommended results, the pan should be removed from the heat, dough unloaded and kneaded, placed in a bowl or bag and sent to a refrigerator. After cooling in the dough, you need to add eggs, in order of priority. After adding each egg, the dough should be thoroughly mixed. The resulting composition should be thick. The distance between the eclairs should be at least five centimeters. This measure is necessary to prevent the connection of eclairs during baking, as they will increase significantly in size. The oven must be preheated to 180-200 degrees. Delay with baking can adversely affect the condition of the eclairs, since the dough can "settle". In the oven preheated to the desired temperature, it is necessary to put the pan and bake the eclairs for 20 minutes. Future cakes should increase in size at least 2 times and brown. - 500 ml of milk;

- 200 g of sugar;

- 50 g of flour;

- 4 yolks;

- 1 teaspoon of vanilla sugar.

First, you need to grind the yolks with sugar, then add the flour and sugar to the composition and mix the mixture thoroughly. Next, you need to boil the milk, remove from the plate and pour a hot mixture into the yolks, which are already grown with sugar. With the help of a mixer, the future cream should be brought into a state of homogeneous mass and put on fire. At the final stage of preparation, the cream should be cooked for 5-7 minutes, stirring constantly.

Next, using a pastry syringe or a spoon, fill the cakes with the resulting cream. It is also recommended to pour ready eclairs with melted chocolate. The dessert is ready!
