Dough is a mass of different smoothness and consistency made from any grain or legume crops. To do this, mix the flour with a small amount of water and / or other liquids and ingredients. This process is the initial stage in creating a wide range of food products, which can be united by a single name - products from the dough. This bread, pasta, flat cakes, cookies, dumplings, pizza and stuff. As raw materials for the preparation of the main ingredient of the test, maize, rice, sorghum, wheat and other cereals or associated crops are used.

In different countries, there are their traditions and recipes, for which they make dough products. This is Armenian lavash, hard unleavened Indian bread bati, traditional bread Ashkenazi Jews matzah, lean cakes nann (common in Central, Western and South Asia), South Asian corn bread of wholemeal flour, Spanish tortilla tortilla and the like. In addition, each bread is baked according to a special recipe and technology, all products have their own shape and size. It can be loaves, rolls, loaves, baskets, rolls, cakes, biscuits.

A special place in the kitchens of different nations is occupied by baskets of dough, which are called tartlets (from the French word tartelette). This is usually a small (no more than 10 cm in diameter) basket. Prepare it from a sand, puff or other unleavened dough. It is used to decorate various meat, vegetable, fish, mushroom or other snacks. Most tartlets are baked separately, and then they are filled with a prepared snack, but sometimes baked all together.

Usually tartlets are small biscuits made from short dough, which is made from pre-cooled foods. To obtain 20 servings, the following ingredients will be required:

  • 4.5 cups of flour;
  • 300 g of granulated sugar;
  • 200 g of chilled butter;
  • 2 eggs (yolks);
  • a pinch of salt;
  • A pinch of soda;
  • Pinch of tartar;
  • A pinch of vanilla sugar.

The flour is sieved and mixed with soda, a wine stone, poured into a slide and made into a groove. Slices of butter are spread evenly along the edge of the flour slide. In a separate bowl, whisk yolks, sugar, add vanilla, salt and tartar, carefully grate and pour into a groove in a flour hill. Quickly knead the dough, form it in the form of a loaf, sprinkle flour on top and put it for 40 minutes in the cold. Then they begin to form products from the test of the desired shape. To do this, the dough is rolled out with an even layer (thickness about 5 mm). Cut out round cakes with a diameter corresponding to the size of the corrugated mold (diameter of the bottom plus two wall heights). Lay each cake into a mold and crimp the dough so that it evenly fills it. Bake at 250 ° C until golden brown. The finished baskets are pulled out from the molds, cooled and filled with a suitable filling.

It is easy to make dough products in the form of baskets, if you use ready-made puff yeast dough for this . Ingredients:

  • 400 g of ready yeast puff pastry;
  • Dry peas (it should be enough to evenly fill four molds in one layer);
  • Oil for lubrication of molds.

The dough is divided into four parts, roll out each part in the form of a rectangle or circle (this depends on the shape and size of the baskets). Roll out the billets in pre-oiled molds. The edges of the dough arbitrarily protrude beyond their edges, when baking they form an interesting openwork contour of the dough basket. At the bottom of each mold with the test, peas are distributed, this will help preserve the shape of the basket. Put the blanks for 10 minutes in the oven, heated to 200 ° C, then remove peas and again sent to the oven for another 5 minutes. Finished baskets fill with a snack.
