Dishes from sorrel - hit of the season

Some plants, which are in our summer cottages, we practically do not use. So, many underestimate sorrel, although it is very useful for our body. It can be used both in fresh and frozen form, adding to soups, salads, pie fillings. Dishes from sorrel are rich in mineral substances and organic acids. Therefore, be sure to take the opportunity to replenish the supply of vitamins, when this plant is in abundance in the vegetable garden or the nearest vegetable market.

Vitamin green cabbage soup

The most popular first dishes from sorrel: hot green soup and cold soups. First, we will reveal the secret of cooking cabbage soup. We will boil the broth. For this, beef should be boiled, cut the meat from the bone and cut into small pieces. Peel potatoes, cut into cubes and cook in broth. Then finely chop the sorrel and add it to the soup. Season the dish with salt, any fresh herbs and, turning to a boil, turn off the fire. Serve with sour cream and half egg.

In the summer cold refreshing dishes are good. Therefore, it will be useful to learn how to prepare soup from sorrel in a cold form. Cook vegetable broth from carrots, onions and spices. Grind 500 grams of sorrel and onions, add to broth and cook for 10 minutes. Season with 2 tablespoons of lemon juice and the same amount of sugar. Cook another 10 minutes. In a separate bowl, mix 2 eggs and 150 grams of sour cream, gently pour this mixture into the hot soup, cook a few seconds to make the broth thicken, salt and remove from heat. Before serving, the soup should be cooled for 2-3 hours and served, sprinkled with green onions, with a slice of lemon.

Chicken salad with herbs

If you are thinking about what to cook from sorrel for snacks, then here are two interesting options - a light salad and cottage cheese muffins. For salad chicken breast, boil and cut into cubes. Sorrel and greens (romaine, spinach, mix salad), rip, sprinkle with olive oil and balsamic vinegar. A little bacon fry until crisp. Mix the chicken with herbs, fresh straw cucumber and bacon. Serve with a creamy tartar sauce or natural yoghurt.

And now prepare the muffins for tea. 300 grams of cottage cheese whisk or wipe through a sieve to make it more airy. 100 grams of sorrel finely chopped. 2 eggs mix with a small amount of vegetable oil and grated cheese. Add 3 large spoons of flour and mix thoroughly. Combine the dough with cottage cheese, sorrel and a handful of pine nuts. Lubricate small muffin molds with vegetable oil and put into each dough, filling them with 2/3. Bake at 180 degrees for about 25 minutes. This batch is not only very tasty, but also useful due to natural, vitamin-rich components.

Other options for healthy dishes

Listed dishes from sorrel - not all that can be cooked with this plant. Make a filling with it for your branded pie from a sand, yeast or even puff pastry. In the summer cook the vareniki not with potatoes, but with minced meat from sorrel, grated cheese and boiled egg. You can come up with your own way of using this useful and delicious plant. And do not forget to make a piece by freezing several green beams for a long and cold winter, when the dishes from sorrel will be especially pleasant to prepare, remembering the warm harvest years.
