Culinary masterpieces: tiramisu cake, eclair cake

Tiramisu is one of the most delicious and popular desserts in the world. The Italian recipe was to taste not only for the inhabitants of the country who invented this culinary masterpiece, but managed to win a huge audience of the whole universe.

When only tiramisu was invented (and this is the end of the seventeenth century), it was a sweet soup that was served for dessert. And only in time it turned into a cake (cake). I must say that the translation of the name "tiramisu" (sounds like "raise me upstairs") coincides with the associations of a person eating a tiramisu cake. Its invigorating components (coffee, wine, chocolate) literally lift above everyday burdens and give a sense of ease and pleasure. Perhaps, that's why the tiramisu cake is so popular.

If you want to eat a dessert that conquered the whole planet, then you have to visit Italy, where it is cooked with a real tiramisu. But you can try to make an Italian dessert in Russian, at home, in which case you will need a prescription.

So, the tiramisu cake . The recipe for classic dessert requires the following components: savoyardi biscuits, mascarpone cheese, marsala wine (you can have another strong wine), strong coffee, chocolate (cocoa), eggs.

We rub the yolks of six eggs with sugar, add the mascarpone cheese (450 g) and a little wine of Marsala to the homogeneous mass. Stir all the ingredients gently and add the whipped whites. In a separate bowl, combine marsala and cooled strong coffee (200 g). In this liquid we quickly dip the cookies and lay them on the bottom of the dishes, in which the tiramisu cake will be located. On the cookie we spread some of the cream (prepared from mascarpone), sprinkle with chocolate chips. Next, alternate layers of cookies soaked in a wine-coffee liquid, with layers of cream. Do not forget to sprinkle with chocolate. For the impregnation, the cake should be left in the refrigerator for at least six hours. Before serving dessert sprinkled with bitter cocoa.

While we are doing dessert in "processing", we can slightly change the ingredients: instead of mascarpone cheese use very fatty sour cream or cream, another cream cheese; Instead of cookies savoyardi cookies are specks, instead of marsala - amaretto liqueur or other strong wine.

In general, lovers of sweets will certainly appreciate not only tiramisu, but also an eclair cake. Especially since this dessert is not so difficult to find from us, like a real Italian tiramisu.

Eclair is an oblong bun with cream (usually brewed), topped with chocolate. This dessert is very easy to prepare at home. This process should not cause difficulties even in very superficially familiar with culinary art.

Add butter (100 g) with water (1 tbsp.) And bring to a boil. When the oil takes a liquid form (it melts), add a glass + 1 tablespoon very quickly. Flour and mix. When the dough is gathered in a com and it will be easy to separate from the dishes, it must be removed from the heat and cooled. Next, 5 eggs are driven into the dough in turn, each time whipping the mixture until smooth. The dough looks like a very thick sour cream. Using a confectionery syringe (you can take a regular teaspoon), spread the dough on a baking tray, oiled, and send the baking sheet to the maximum heated oven. It is important that the oven door should not be opened until the cakes are browned and raised in volume.

We start cakes with a custard (this is also convenient to do with a syringe). Top with eclairs hot chocolate or chocolate glaze.

Such amazingly delicious things can be cooked at home in order to regale the sweet and cause a storm of joyful emotions in their loved ones.
