Champignons in sour cream. How to cook properly?

You decided to indulge your loved ones with an unusual dish, but the meat and vegetables are already fed up. What to cook? The answer is simple - mushrooms. More often for cooking use champignons, less often forest mushrooms, such as: honey agarics, chanterelles, podborozoviki. Dishes with mushrooms are very many: from simple mushrooms in sour cream to unusual - champignons in avocado with pineapple. It all depends on what purpose of the dish is a normal family dinner or something special and romantic. Mushrooms, by the way, are the strongest aphrodisiac, if properly cooked. For example, champignons fried with sour cream are suitable for a quiet dinner with the whole family, which can not be said for mushrooms stewed in white wine with liqueur, with the addition of citrus. It all depends on your imagination.

In order to prepare champignons, you do not have to go to the forest for mushrooms, it's enough to reach the nearest supermarket or market. Despite the fact that it is such a widespread product on the shelves, the mushrooms are notable for their usefulness and taste and even are considered a delicacy. We must not forget that champignons can not be given to children in large quantities or often.

Before preparing any dish from mushrooms, they need to be cleaned properly. Many mistresses simply throw them into the water and thoroughly wash, but this is not right. With this washing, mushrooms absorb water and become completely insipid. Champignons must be wiped with a dry or slightly damp towel or napkin. With mushrooms, all contamination must be removed. Now they can be cooked.

The most common dish is champignons in sour cream. Why in sour cream? Because sour cream is better than any other product emphasizes the taste of mushrooms. Mushrooms need to be cleaned, folded into a small plate with deep sides. Pour a mixture of vinegar, water and citric acid. The mixture is prepared in such proportions: for 1 glass of water 2 tablespoons of vinegar and a half teaspoon of citric acid. Leave to stand for about 2 hours. Then we put the soaked mushrooms in the cauldron (the enameled dishes will not work). We put on a small fire. During heating, the mushrooms are given juice, so do not add water. When mushrooms are boiling, add spices and a little onion. Allow to extinguish for about 5 minutes. Then dilute the flour with water in the proportion of 1 tablespoon of flour to a half glass of water. Stir well and pour into the mushrooms. It is necessary to carefully mix the resulting mass so that lumps do not form. Stew for another 10 minutes and the dish is ready for use. It can be served any garnish (buckwheat, potatoes, rice) or even just vegetables.

If you decide to make champignons for children, remember that they can be given no more than once in 2 weeks on the advice of pediatricians. For children, you can cook the same mushrooms in sour cream, but with the original feed. You can extinguish whole mushrooms, then separate the hats from the legs. After that, you can stuff a cap with a mass of grated cheese with tomatoes. The taste of mushrooms cooked in sour cream is perfectly combined with cheese and tomatoes. This dish is suitable not only for children, but also as a snack on the table for adults.
