Baking with carrots: carrot cake, pancakes, pancakes and pies

Dishes from carrots are not only tasty, but also useful: this sweet vegetable contains vitamins of group B, provitamin A, vitamin C, mineral salts of potassium, iron and copper. Due to its excellent taste, carrots are perfect for baking: carrot cake or casserole, pancakes or pies with carrots are easy to prepare.

To make a carrot cake, the carrots should be grated on a fine grater and squeezed lightly. In ½ cup water dilute 20 grams of fresh yeast (they can be replaced with dry at a rate of 3: 1). Add carrots (300 g), drive in three eggs, pour a glass of flour, mix everything well, then put in a warm place.

The rest of the flour is added with the rest of the flour (it should be only 0.5 kg), 100 g of oil, a glass of sugar, ½ tsp. Salt. If desired, you can also put lemon zest and vanillin, poppy seeds, raisins or nuts in the dough. Everyone is kneaded and put up for a second lift. After the dough grows well in volume, it is spread into a cake mold and baked until ready for about an hour at +180 degrees. The finished carrot cake has a bright orange color. A variety of recipes for carrots and cupcakes are popular with those who keep fasting: in this case, eggs are not put in the dough, and butter is replaced with vegetable oil.

From carrots you can prepare and delicious pancakes, but for this it must first be cooked. Cooked carrots (1 kg) grind, knead with a fork or grind in a blender is still warm - this is important. In the resulting puree put salt, two whipped eggs, 2 tbsp. L. (About 60 g) of vinegar, sour milk or kefir, as much sugar. Pour 1 kg of flour, to which 1 ½ tsp is added beforehand. Soda, and mix the dough well. Bake carrot pancakes in a very hot frying pan. If carrots are not very sweet, you can put more sugar. Such pancakes are not less delicious than carrot cake, but they are prepared faster and easier.

There are other recipes for carrot pancakes: sweet - with apples, raisins or original - with soy cheese tofu and potatoes. To prepare the last take raw, grated potatoes and carrots (1: 2), lightly squeeze and add to them a little tofu, which is pre-kneaded with a fork. In the mass put salt, ground pepper or other spices, as well as vegetable oil and flour (for one potato and two small carrots - 1 tbsp.). Since in this recipe both potatoes and carrots are raw, fritters should be fried for at least 20 minutes under the lid. When serving, you can put them on the leaves of the salad.

You can also make pancakes from carrots. True, this recipe will have to tinker, but the result is worth it. Take half a kilo of washed and peeled carrots and boil it until soft. Ready carrots are grinded to a puree state, add ¾ l of milk (750 ml) and bring to a boil. In boiling mashed potatoes you need to pour a glass of flour a little, carefully rubbing, so that there are no lumps. Then add another glass of water or milk, stirring everything thoroughly. Drive 4 eggs, pour in another glass of flour. Add 100 g of fresh yeast (they should be previously diluted in a glass of water), mix the dough well and leave it for two hours.

After this time, salt is added to the dough, 2 tbsp. L. Oil, ½ tbsp. L. Sahara. All stir, add half a glass of flour and mix for 15 minutes. The dough is placed in a warm place, covered with a towel. After it rises, you can bake pancakes.

Those who often bake pies, recipes with carrots, too, will certainly be interesting. The filling of carrots for pies or pies is prepared as follows. Purified carrots (1-1.5 kg), cut, pour ½ tbsp. Water and stew until cooked. Stewed carrots are ground, salt, add a spoonful of butter and as much sugar. You can make the filling and savory - then it does not put sugar, but add 3-4 chopped eggs, hard-boiled. In the same way, the pumpkin stuffing is also prepared.

Carrot cake after baking can be covered with a glaze of egg white and a glass of powdered sugar with the addition of lemon juice. To pancakes and pancakes from carrots served sour cream, honey or a scalded vanilla sauce from 1 ½ st. Milk, two eggs, ½ st. Sugar and a teaspoon of flour with the addition of vanillin.
