Therefore, for mashed potatoes or soup, the varieties with the greatest amount of starch are ideal, and for roasting - with the minimum.

At the second stage of cooking fried potatoes, you should think about the degree of its cutting - not thicker than 1 centimeter. Thin bars are best to rid of even the starch, which they contain in small quantities, for which the product is thoroughly washed and dried on a paper towel. The less moisture there is in the potatoes, the less it will cause trouble - practically will not splash and it will be well fried.

How correctly to fry potatoes? Be sure to spread it on a well-heated frying pan with hot vegetable oil in the right amount. To have a dish that has its own unique flavor, it's better to choose the refined oil, but it should not be too much to make the potato well-cooked.

To do this, you need to take: the actual potatoes (1 kg.), Mushrooms (600 grams), onions (300 grams). For frying, you will need vegetable oil, and for decorating dishes - greens.

Preparation: First, the onion is cleaned and finely chopped, then follow the large cubes to cut the mushrooms, the small pieces - the potatoes. Before you properly fry the potatoes, fry in the oil in a pan, and after a few minutes, pour in the mushrooms. A few minutes later, you can put the potatoes on the pan - salt in the middle of the process and mix thoroughly all this time. After 20-25 minutes, the dish can be laid out on plates and sprinkled with herbs.

An interesting variant is also the preparation of a delicious folk dish. It will take for him the following: potatoes (800 grams), onions (100 grams), lard pork salted (100 grams). In addition, you can not do without vegetable oil for frying, salt and greens. About the preparation of fat should be taken care of even before it is properly fried potatoes. It must be separated from the hard skin, clean off the salt and cut into small blocks. Then, the fat is fried in a heated frying pan to a golden crust, after 1-2 minutes, the vegetable oil is poured into the same frying pan, into which it is already possible to lower the potatoes that have been peeled and cut into small pieces. With the first stirring, you can add finely chopped onion to the dish, salt it and cover it with a lid, fry for 5-6 minutes. After that, the food can be mixed as needed - and when it is covered with an appetizing crust, it can be laid out on plates and, decorated with chopped herbs, served to the table.
