Wine is one of the most favorite alcoholic drinks among women. It is not as strong as cognac, rum or whiskey, it does not stupefy the mind and it is easy to drink. A glass of good wine perfectly complements a delicious dinner and allows you to relax a little after a busy day. Today, there is a huge selection of a wide variety of drinks, but we can not always be sure in their quality. That is why it is superfluous to learn how to make wine from a cherry yourself. In fact, this process is not so complicated, and everyone can feel like a winemaker, there would be a desire. Why from cherry, not from grapes? The fact is that this berry grows in our country almost everywhere. Well, grapes are still a heat-loving plant and require more careful care. In addition, in shops cherry wine is less common, and to taste it is not inferior to the traditional grape.

Before making wine from cherry, you need to familiarize yourself with several of its features. So, for its preparation one berry juice will not be enough. Still, cherry is less sweet than grapes, and therefore the finished product can turn sour. Therefore, the recipe necessarily contains sugar, which increases not only the sweetness, but also the strength of the drink. In addition, water is used to reduce acidity.

So, how to make wine from cherries at home? The whole process should be divided into several stages:

  • The must is prepared;
  • Fermentation occurs upper and lower (rapid);
  • The fermentation is quiet, the removal of wine from the sediment;
  • Final ripening of the drink;
  • Bottling and storage.

So, the first stage. We take a large container (if there is a barrel, then it is excellent) and fall asleep in it berries. Tails and bones (you can leave a few pieces to make the tartness) should be removed beforehand. Now begins a very exciting process - pushing the berry. You can do this with your hands or nonsense. After that, add sugar and water. Stirring. This mixture is called "wort".

In accordance with the classical method of preparation, a bucket of cherries is taken as much water and 3 kilograms of sugar. If you want to get a light table wine, the recipe will be different: for the same number of berries, take 2 kg of sugar, 2 liters of water and a little (gram 3) of citric acid.

Now the container with the future alcoholic beverage should be covered with a lid and left in a dark place for fermentation for a month. Twice a day you need to mix it, so that instead of wine you do not get vinegar. However, more often it is not necessary to open it either - the excess air will get. A week after the start of fermentation from the surface of the wine mass, it is necessary to remove the mash (not to deteriorate). The final stage will come in 30-45 days. Wine must be filtered and bottled.

And how to make wine from cherry fortified? The algorithm is almost the same, but after wringing the wort you need to add the yeast to it and insist 10 days. Then the precipitate is removed, sugar and alcohol are added, it is still aged for 10 days. Then the wine is filtered and bottled. In this case, the proportions are the following (per 10-liter bucket of berries):

  • Sugar - 2 kilos;
  • Water - 2 liters;
  • Alcohol - half a liter;
  • Yeast - a teaspoon.

Now that you know how to make wine from cherry yourself, there will be no need to buy a store product of questionable quality. A good reason to boast of his winemaking skills and, of course, treat his relatives and friends with the real wine of his own cooking.
