Differences in the recipe, selection of raw materials, leaven and other minor at first glance, the details change the taste of wine at the output. So, let's start preparing the wine from the cherry with the preparation of raw materials and sourdough. For a drink from any fruit, these operations are identical. Cherry can be substandard, curve, shallow, but it must be healthy, ripe and not rotten. You should carefully sort out the raw materials and remove all the unfit fruit.

If the cherry is ready, it should be transferred. The juice you will fade is the leaven.

For wine from cherry leaves 200-300 grams of leaven for every ten liters. I make one leaven a year, and if after the first batch I plan to lay the second, then instead of the starter I use the residue from the first batch. In this case, for every ten liters of wine, one hundred grams of sludge is required.

Now that we have both raw materials and leaven, we will begin the main process. After this period, it will be necessary to carefully drain the juice, squeeze the pulp and drain the juice that was squeezed out of it, then both juices merge together and are again bottled with the water seal installed. After 5 weeks, you can pour the finished wine from cans into bottles.
