Special sauces of "sour cream" density. Their main difference from their numerous more fluid counterparts in the way of application. In a vegetable dip - or in any other dip - they usually dunk food, and do not water their food. In English, "dip" means "dipping", "dunking".

What are dipes?

Such sauces are popular all over the world (most - in America and China, less - in Russia). Deep can also be sweet. A fondue - a melted mixture of different components - in fact, can also be called a dip (there are chocolate, cheesy options), in which are dipped pieces of fruit and vegetables, bread.

How to cook?

Using modern kitchen appliances to make a vegetable dip is not difficult. The main thing in this business is a blender, which performs the basic functions of mixing the constituent parts to the state of homogeneity. Fortunately, he is now present in almost every kitchen. We offer several original recipes, telling how to prepare a dip simply.

With sesame paste

We need: one big eggplant, one sweet pepper, a garlic head, a small onion bulb, two tomatoes, half a glass of sesame paste (tahini), lean oil, coriander, salt, pepper, lemon juice.

To prepare an eggplant-vegetable dip with tahini, cut the eggplant along, peel the pepper from the seeds and cut, tomatoes into four parts. Oven heat up to 180 degrees. We lay out the baking sheet with baking paper, lay out prepared vegetables on paper, pre-lubricated with lean oil. Garlic is not disassembled on denticles, but simply cut off the unclean head of the top, so that the teeth were slightly open.

Ready-made vegetables are peeled: eggplant, pepper, tomatoes, garlic, onions. We put everything in a blender, add salt, pepper, lemon juice. We grind to a state of homogeneous puree (without lumps). We prepare vegetable dip. At the end of the process, add tahini sesame paste and mix. If desired, put a little coriander fresh (it will add spice to our sauce) and one clove of fresh garlic. Finally, mix in a blender. Vegetable soup with tahini paste is ready.

Judging by the reviews of the chefs-lovers and just gourmets, it turns out "yummy!" We also advised to increase the amount of lemon juice introduced. Pasta from sesame tahini (by the way, it is already possible to buy it freely in supermarkets) gives "nutty" notes and makes the sauce look like a cream. It can be prepared at home. To do this, take a glass of sesame seeds (pre-lightly fry them or bake in the oven for 15 minutes) and a quarter cup of vegetable oil (preferably sesame, but in principle, any lean: olive, sunflower, corn). In a blender, both ingredients are ground to a paste. Add the oil gradually. Ready pasta can be stored in the refrigerator in a glass jar for a long time. By the way, tahini is used in cooking recipes for another dipa, known from ancient times.

Humus

It is said that this tasty and healthy pasta was consumed even in ancient Egypt, seven thousand years ago! The recipe for cooking hummus, which can also be conditionally called a dip, is a great variety. Here's one of them.

Ingredients: half a kilo of chickpea (a special kind of pea), soaked in water before swelling; Lemon juice, half a glass of tahini, two cloves of garlic, olive oil and salt, hot pepper.

Release the soaked chickpeas from the water. You can make peas and cook, but from raw - it's more useful than hummus. In the blender we fall asleep all the ingredients, mix until homogeneity. To make a sharp, add the chili. Such a paste can be stored in the refrigerator for up to a month. If it seems dry, add a little extra olive oil. We serve to the table with hot cakes. Delicious!

Cream Vegetable Dip-Sauce: Recipe

Ingredients: two cups of arugula, a celery stalk, a small carrot, several green onion feathers, two cloves of garlic, a glass of sour cream, one hundred grams of cottage cheese, one large spoonful of fresh greens of dill, basil, parsley, tarragon, 100 grams of potato chips, pepper.

Place the finely chopped vegetables in a blender and mix until homogeneous. Then add the rest of the ingredients. In the end - chips. Mix again. Creamy vegetable dip is ready for use. It can dunk chips, pieces of vegetables and cheese.

How to use?

All vegetable dipy (to which you can include ketchup) require special attention. They are usually served to the table in a special bowl, dispensing in portions. Separately served food, which is supposed to dunk in the sauce: all kinds of food, cut into small pieces. It can be vegetables, bread, cheese, fruit. Choose to taste, cut.
