Sturgeon fishes are an ancient family. According to available data, they appeared about 250 million years ago. Sturgeon fishes differ in their appearance: the presence of bone flaps, a long muzzle and four mustaches near the mouth allow them to recognize immediately among a wide variety of fish families. The sturgeon resembles cartilaginous fish with their structure, they do not have vertebrae, instead there is a cartilaginous chord, which has increased elasticity.

The most common sturgeon fishes are the Baikal sturgeon, the Russian sturgeon, as well as the sterlet, beluga stellate sturgeon and Kaluga. They are all fairly large and some specimens reach a length of up to 3 meters. Beluga is the largest representative of this family, and the sterlet is the smallest fish of the sturgeon family. Almost all sturgeon are migratory fish, that is, they live in the seas, and they come to rivers for spawning, except for Baikal sturgeon, which is adapted to life without salt water.

Sturgeon fish are predators and therefore feed on small fish, various worms, mollusks and insects. The difference of this family of fish is a long period of life, so puberty occurs quite late.

Since the Baikal sturgeon does not require salty water for its content, its breeding began earlier than other species of fish of this family. Now the sturgeon has well taken root on the Volga, it is bred in many farms in Europe, as well as in Uruguay.

The first years of their life sturgeon spend in the seas, and only entering into sexual maturity (12-16 years), the fish rushes to the mouth of the rivers. It moves upstream to certain places where spawning takes place.

The breeding of sturgeon fishes, although rather complicated, but very profitable. With certain knowledge, developed economic approaches, it is possible to use sea pastures on which sturgeon will be grown, not only yielding valuable caviar but delicious meat, while labor costs can be minimized.

Business in food production has always been profitable, is not an exception and breeding fish, especially sturgeon, since it is a staple food. In some countries it is fish that is the main product and most of the dishes are prepared from it.

Sturgeon is not in vain considered one of the most valuable species of fish, as it was already said, it is a source of not only black caviar, but also tasty and healthy meat. Recently, such a type of business as sturgeon breeding has become very widespread.

To start this business you need to have a plot of land on which you will have to equip a swimming pool, where there will be running water or you can buy an already prepared pond. If you plan to grow sturgeon weighing up to a kilogram, it will be enough to simply saturate the pond with oxygen. If you have sufficient funds, you can purchase a specialized pool, in which the water is continuously circulated, but this is not necessary.

With the acquisition of fry, there are currently no problems. Sturgeon grows quite quickly, and if you bring fry in spring, then by autumn it can quite reach a weight of one kilogram. For this, it is necessary to create ideal conditions for its growth and to apply high-quality feed.

If you decide to create an enterprise for the production of caviar, it is worth buying adult fish, the age of which will be more than 14 years, this is the age of entry of sturgeon into puberty.

If you succeed, then there will be no problems with product sales. Depending on the direction of your enterprise, the number of invested funds, the payback of this type of activity is 1-10 years.
