Skoblyanka. The recipe for a tasty and healthy dish

Among all the abundance of the second dishes is a kind of variety, which is not known to everyone. It wears the amusing name "skoblyanka", the recipe is uncomplicated and somewhat reminiscent of the usual stew. However, there are also cardinal differences that make it possible to distinguish this dish in a completely separate category. While it is not known exactly who is the "author" of the dish; Mostly tend to the fact that the Russians, but some sin on their neighbors, Ukrainians. In connection with the fact that it is preferable to use seafood in skovlyanka, which are absent or little used on that side of the border, the first ones are probably right.

What is a scoop and what do they eat?

Quite often there is also the second name of this dish - the "crook". Than such names are caused - it is not clear. If the clay is meat that needs to be specifically set, then when preparing the variety in question, the stew does not have to be scraped. But let's get to the point.

When preparing the scab, the recipe clearly provides for the use of several types of meat. And it is desirable to combine seafood (or fish) with something terrestrial, in particular - with pork. This is the first condition that guarantees you that you will receive exactly what you wanted.

The second, no less obligatory, rule is that any meat that you intend to bring into your skovlyanku must be frozen. We could not find a rationale: maybe it is so beautiful cut? However, such a requirement is found in all recipes.

And the third: you can put almost any vegetables in your dish - according to season or to taste. But mushrooms must be sure! Otherwise it's not a scoop. A pathetic likeness or disguise for it.

In those regions where one does not need to explain to others what a scoop is, the recipe necessarily includes an ingredient such as trepangs. They cook for quite some time, three hours. Yes, and the water should be changed periodically. There is a pressure cooker - the time will be reduced to 20 minutes. Then the ready seafood must be finely chopped and mixed with pre-fried and sliced pork strips. After that, fresh tomatoes and sweet peppers, fried mushrooms (preferably wood, incredibly aromatic, but in case of emergency, champignons), chopped herbs and onions are added. You can say that this is a traditional scab. The recipe, however, is disputed by many, as its manufacturers believe that trepangs with mushrooms do not mix very well. Therefore, if you want you can do without them.

Another sea fantasy

No less interesting is the scab, whose recipe includes cucumber. If anyone does not know, it is such a marine animal, called a sea cucumber. In the mid-latitudes, it can be found only in large supermarkets, and even not in all, but in the north, most residents have long appreciated the taste of cucumber. Skoblyanka with it is simply delicious, and there are hardly any dishes comparable to it.

To prepare this dish, take an equal proportion of sea cucumber and some other meat (to choose from). Experts say that the combination with chicken or beef is especially successful. So, let's start from the fact that we have half a kilogram of seafood and chicken. Of the additional ingredients you will need: a bulb (not very small), a spoonful of tomato paste, flour and soy sauce and three cloves of garlic.

To get a quality scab from the cucumber, the recipe offers all the ingredients to cook separately. So, the cut meat is fried and stewed to the full readiness, and the marine inhabitant (also cut into strips) is fried with onions. Then add the flour, pasta and sugar to the pan (very little, and only if the tomato is sour). Extinguished content about three minutes.

In the pot, the contents of the two pans are laid out, the broth is added, all three minutes are still boiling. Then add pepper, seasonings and soy sauce, squeeze out the garlic. The fire is extinguished, and all the tasty insists half an hour under a tightly closed lid.

Whatever seafood you choose for your skoblyanka, rest assured that you will not go wrong - it will still be delicious and useful. Kukumaria in this respect is unique: in addition to the advertised beneficial effect on the cardiovascular system, a unique complex of trace elements, an irreplaceable effect on the thyroid gland, sea cucumber, it turns out, is also characterized by an antitumor effect! So this dish must be introduced into your diet. Well, or at least occasionally pamper yourself with such yummy.

Fishermen and fishes

Some people do not like meat. And someone is fasting. In those days, when he is not too strict, very close to the place will have a fish shovel. For this type of dish, even an exception is made - the presence of other meat in it is not necessary. Classics require the use of salmon, but the practice has shown that you can not and do not spend on such an expensive product, any fish is quite suitable.

So, 150 grams of fish fillet will go 150 grams of mushrooms (and there will be more forestry here), one onion, a clove of garlic, two or three potatoes, cheese (preferably curd and herbs, it will not turn out this - you have to add greens separately) , And, as usual, salt pepper.

It is noteworthy that potatoes are cooked separately and in uniform. To get a real fish skoblyanka, the recipe advises potatoes to cut already cooled and circles. Then prepare the sauce: heat 100 ml of milk, pour in shabby cheese and stir until homogeneous on low heat. At the end add crushed garlic.

Mushrooms are cut as they please, but for beauty it is better to chop them with plates. Then they fry with onion, salt and mix with a couple of spoons of sauce. Fish at this time is cut into medium pieces, sprinkled with lemon and poured with the rest of the sauce.

We put fish, potatoes and mushrooms in a deep frying pan. All this stuff is baked for about 20 minutes at 190 degrees. Gently, juicy and delicious.

Beef is also appropriate

If you want something dietary, low-fat, but the fish do not tempt you, remember the fairly lean meat - beef or veal.

As in the fish variant, it is better to take mushrooms, although the champignons are not prohibited. To get a successful shovel from beef, the recipe advises adding a spoonful of flour and as much cream or sour cream when frying onions with mushrooms. Otherwise, the method of preparation is not very different from the others. By the way! Beef allows for variety. Want - bring to mind in the oven. No - cook until cooked on the stove. Potatoes in the original version does not participate at all, but tastier (and nourishing!) Yet with it.
