Samsa Uzbek: how to cook

Samsa Uzbek is a nourishing batch of puff pastry with vegetable, mushroom or meat filling. There are many recipes for cooking this oriental dish, and we want to share with you the most interesting.

Dough for samsa. Recipe

The Uzbek way of preparing the dough is quite simple, so you can easily reproduce it in your kitchen:

  • Mix four cups of sifted wheat flour, 250 grams of boiled water and a little salt.
  • Knead the dough and divide it into several parts. Put the billets in the refrigerator for half an hour.
  • Roll each part into a thin enough layer, and then grease them with melted margarine or fat.
  • Fold each piece with rolls, cut it into pieces again and roll it out again.

The more times you repeat the specified sequence, the more layers will be in the finished test.

Classic Recipe

As we have already said, Uzbek samsa can be prepared in different ways. However, the traditional dish is baked on charcoal in a tandoor (a special oven), and as a filling is used lamb, fatty fat and a lot of onions. To simplify the process, we suggest baking samsa in the oven:

  • Prepare the dough according to the recipe described above.
  • For the filling, take 300 grams of mutton or beef fat (focus on your taste preferences), 300 grams of meat, three onions, salt, pepper and ziruto to taste. Cut all ingredients with a cube and mix with spices.
  • You can choose any form for samsa - it can be a square, a circle or a triangle. Cut the dough into circles or squares, put the inside of the filling and secure the edges.
  • Lay the samsa on a baking tray, oiled, with seams down.
  • Whisk the egg, apply it with a brush to the surface of the patties, and then sprinkle them with sesame seeds.

Bake the samsa until the meat is completely cooked - about half an hour.

Samsa Layered Uzbek with Pumpkin

Treat your loved ones with a delicious seasonal dish. Recipe:

  • Put a spoonful of salt in a deep bowl, pour a glass of water and break the egg. Whisk the ingredients with a whisk. After this, pour 500 grams of flour and knead the dough. Put the finished product on a cutting board, cover with a bowl and leave for a quarter of an hour.
  • 200 grams of peeled pumpkin cut into small cubes.
  • Grind 70 grams of fatty fat and add to the vegetables.
  • Ziru rub in the palms and put to the filling. Mix the ingredients, add a little vegetable oil, salt and ground pepper.
  • Sprinkle the working surface of the table with flour, lay the dough on it and crush it with your hands. After this, fold the layer in half, sprinkle it with flour and repeat the operation again.
  • Roll out the dough with a rolling pin rather thinly, oil the surface with vegetable oil and roll it with a roll. Cut the workpiece into twelve pieces - this will be the basis for the samsa.
  • Roll each piece of dough with a rolling pin so that in the middle it is thicker, and at the edges - thinner. In the middle, lay out the filling and blind the edges so that the samsa is triangular.
  • Put the cakes on a baking sheet.
  • Yolk whisk with a little water and brush the baking surface.

After 20 minutes, the delicious Uzbek samsa will be ready. Serve pastries to a table with hot or cold drinks.

Samsa with potatoes

This very simple recipe can be used in the form presented by us or you can supplement the filling as desired. The Uzbek samsa, the photo of which you see above, is prepared as follows:

  • Prepare a puff pastry from three glasses of flour, 250 grams of water and a small amount of salt. If you want, you can purchase the finished product in the nearest cooking.
  • Clean and cut six medium potatoes into a cube. Add to them crushed fat, spices and salt.
  • Roll out the dough and cut into eight pieces. Give each blank a circle shape, put the filling in the center and protect the edges.
  • As usual, grease the surface with whipped yolk and sprinkle with sesame seeds.

Bake for half an hour before the golden color.

Samsa Uzbek "Lazy"

This unusual dish is easy to prepare for breakfast or for evening tea for the whole family. The recipe for its preparation read below:

  • Defrost 500 grams of puff pastry, roll it and cut into 16 squares.
  • For the filling, chop the peeled potatoes, sausages and onions. Lightly fry the products in vegetable oil and cool. Mix them with salt, ground pepper and any spices.
  • Lay out the filling on the dough and tape the edges with an envelope. With a beaten egg, spread the surface, sprinkle it with poppy seeds and sesame seeds.
  • After that place the patties in a preheated oven.

In a few minutes, delicious pastries will be displayed on your table.

Samsa with minced meat

We want to share with you another interesting recipe for oriental cuisine. This time we will use not quite traditional stuffing. However, the taste of this does not deteriorate - it recognizes the Uzbek samsa we love. We will describe the preparation of the dish in stages:

  • Grind five or six bulbs, mix them with 500 grams of ground beef, add fat (if any), salt and spices. Stir all the ingredients.
  • Prepare a simple dumpling dough, roll it and grease with melted margarine or vegetable oil. Fold the workpiece into a roll and put it in the refrigerator for one hour.
  • When the specified time passes, the roll can be obtained and cut into small pieces. Billets should be shaped like flat cakes, put the filling in the center and protect the edges.
  • Lay the "triangles" on a baking sheet covered with baking paper, grease them with eggs, sprinkle with black and white sesame.

Baking should be cooked in a well-heated oven for half an hour. You can serve pies with a sauce of tomatoes and spices.

Samsa with chicken

According to this recipe pies are delicious and low-fat. Therefore, they can be safely used by those who watch their figure.

  • Prepare the yeast dough and let it "go" under the closed lid.
  • For the filling, take chicken breasts or fillets. Cut the meat into small cubes, mix with chopped onions, zira and cinnamon. Remember that the more you put onions, the more juicy it will turn out the ready dish.
  • Cut the dough into small pieces, each roll out and fill with filling.
  • Cut the edges of the blanks, giving the desired shape to the pies.
  • Put the samsa on a baking tray and do not forget to lubricate its top with a beaten egg. After that, sprinkle the pies with black and white sesame seeds. If desired, you can also use poppy seeds.

Samsa Uzbek is cooked in a preheated oven and served to the table in a hot form. As a supplement to the dish you can use the home sauce.
