Salad "Cole Slough": recipe

Cabbage is a unique vegetable, because when stored, it practically does not lose vitamins until the very spring. For excellent taste qualities and a combination with different, sometimes completely unexpected components of cabbage for many decades is especially appreciated, revered and welcomed. And with the arrival in our life of American snack chains with an original menu, a salad such as "Cole Slough", suddenly became a favorite of the public. There are many variations on the theme of cooking this dish.

The recipe for the original salad

This dish is able to please the whole family, each member of which will discover for himself in his taste something special. "Cole Slough" salad, the recipe of which is rather simple, includes the following ingredients:

  • White cabbage - 400 g.
  • Carrots of medium size - 1 pc.
  • Bulb - 1 pc.
  • Lean milk is ¼ cup.
  • Yogurt without fruit pieces - 2 tbsp. Spoons.
  • Mayonnaise - 2 tbsp. Spoons.
  • Juice half a lemon.
  • Wine vinegar - 1 tbsp. a spoon.
  • Salt.
  • Greens and spices to taste.

We use a food processor

At the very beginning we will shred vegetables for the Cole Slough salad in the traditional way, and then arm ourselves with a little cunning. We clean and three on a large grater carrots, cut the onion into half rings, shred cabbage. Vegetables do not rush to put in a bowl, and firstly put them in a food processor. For this purpose, a container-shredder of the blender will also come in handy. Important point: our goal is to grind the vegetables a little, giving the same size to the pieces. Therefore, we will use several small pulsations. Now put the vegetable mass in a bowl, salt, if there is a desire, pepper, squeeze your hands.

Salad "Cole Slough" implies the presence in the dish of the original sauce. We will prepare it in a separate bowl using a whisk. Milk, yogurt, lemon juice, wine vinegar and mayonnaise we put in a bowl and whisk thoroughly. Pour the sauce into the crushed vegetable mass, mix and season with finely chopped dill. As you can see, there is nothing complicated.

"Cole Slough": the original New Orleans recipe

To prepare a salad on this recipe, some traditional North American products are used. Pecans are sold in our country, but maple syrup, unfortunately, is not found in every supermarket. Here is the complete list of ingredients required for the dish:

  • White cabbage - 400 g.
  • Carrots - 1 pc.
  • Pecan nuts - 1/3 cup.
  • Celery - 3 sprigs.
  • Low-fat milk, yogurt, mayonnaise - 2 tbsp. Spoons.
  • Apple vinegar and maple syrup - 1 tbsp. Spoon.
  • Salt.
  • Spices and herbs to taste.

Preparation

The process of preparation of the New Orleans Cole Slough has its own subtleties. By the way, the calorie content of this dish is high because of the content of nuts in it. Therefore, those who follow their figure, we do not recommend it, except on major holidays. By the way, if you can not find a pecan for sale, you can replace this component with a walnut.

To grind vegetables, we will manage the usual knife and grater. We rub the carrots, shred cabbage and cut the celery into thin strips across the branches. We put vegetables in a bowl, salt, pepper and strongly wring out hands. Nuts will be crushed in a mortar. If there is no mortar, you can use a conventional rolling pin and a cutting board. Add crushed pecans to the total mass. Then proceed to prepare the sauce. Ingredients for the sauce are also beaten in a separate bowl with a corolla. Then the ground is filled with chopped vegetables and nuts. In the original American version there is more mayonnaise, but we are not enemies to our own health, so we reduced the dosage considerably. Yogurt Americans do not use at all. Finally, imagine a variant of the dish, more adapted to Russian taste preferences. For preparation we use as components:

  • White cabbage and red cabbage - for 200 g.
  • One green apple.
  • Carrots - 1 pc.
  • Red bulb,
  • Celery root - 50 g.
  • Mayonnaise - 2 tbsp. Spoons.
  • Mustard - 1 teaspoon.
  • Lemon juice - 1 tbsp. a spoon.
  • Salt, sugar.

Before we proceed, we taste mustard: it should not be too sharp.

We use a grater for Korean carrots

We proceed to shredding components for the salad "Cole Slough" with red cabbage. Both types of cabbage shred thin slices, squeeze. Carrots and an apple will be rubbed on a grater, intended for cooking carrots in Korean. In salads, where there are apples, there is one not very pleasant moment: the fruit darkens and spoils the type of dish. Therefore, before you send the grated apple to a bowl, sprinkle it with lemon juice. Then three celery roots on a regular grater, and onions cut into half rings.

All components are sent to a salad bowl, mixed and salted. Here you need a little sugar, which can also be replaced with honey. We will not make the sauce separately, only refuel with mayonnaise and mustard. All thoroughly mixed. You can serve the salad "Cole Slough" by decorating the pomegranate seeds.

This simple dish is amazingly beautiful. Cutting red cabbage and ringlets of purple onions make the salad so appetizing in appearance. Apple also gives an incomparable fresh flavor. This dish will not be high-calorie if you replace mayonnaise with non-fat sour cream. Also this version of salad involves experiments with additional ingredients.
