Prepare khachapuri with cheese - recipe of Georgian tortilla

Each hostess can cook khachapuri in own way, and therefore it is difficult to talk about any classical recipe of this Georgian dish. There are a lot of options - prepare the dough in different ways, and use a different stuffing, which can be from potatoes or beans.

However, cooks with the simplest and most common option is khachapuri with cheese and eggs.

Four ways of cooking khachapuri with cheese

1) Khachapuri with cheese - recipe from yeast dough:

For the test you need wheat flour - 2.5 tbsp, yeast 30 g, egg, half a glass of milk, a little salt.

For cheese filling, take 250 grams of suluguni cheese.

To lubricate khachapuri you will need one yolk.

Method of preparation: Make a yeast dough and leave it so that it can go well. Cheese grind your hands so that it becomes a homogeneous mass. Separate a small piece of dough and stretch it into a flat cake. Above put a piece of cheese of about the same volume.

Stuff the dough for cheese filling inside. Chop khachapuri into a thin cake about 20 cm in diameter. Lubricate the surface with a rich yolk and bake khachapuri with cheese in the oven.

2) Khachapuri with cheese - recipe from yeast dough:

Prepare the filling: mix 250 g of chopped homemade salted cheese or brynza with one raw egg. Pound the yeast dough into several pieces and form round cakes. Evenly dividing the entire filling into parts, put it on flat cakes. Protect the dough, hiding the filling completely, and square it. Top the cakes with egg and bake until cooked in a hot oven. Finished khachapuri with cheese should be oiled, so that they have an attractive appearance.

3) Khachapuri with cheese - recipe from unleavened dough:

For the test, you need milk about 2 cups or matzoni, two eggs, a little salt. Wheat flour is required so that the dough does not turn out to be too steep.

For the filling is ideally suited Imeretian cheese (about 500 gr.) Perhaps, replace it with cheese or salted homemade cheese. Prepare 2 raw eggs.

Imeretian cheese should be cut into pieces, pour water (cold), so that it completely covered it. If it is slightly salted, then it is not necessary to soak it. Leave the cheese in the water for a while, after a couple of hours, drain it, squeeze well and stir the cheese, adding eggs. Divide the filling into four parts.

Dough made of milk, eggs, salt and flour. Take care that it is not excessively steep. Divide the dough into four pieces and roll four cakes (do this by sprinkling it with flour). Fill the filling in the middle and protect the dough so that the cheese is completely inside the cake or that there is an opening on top of the cake. According to the size of khachapuri must correspond to the frying pan, on which you will bake them.

Put the tortillas on a greased hot frying pan down the seam, and bake under the lid. When one side is baked, turn the khachapuri and bake without a lid. Finished khachapuri anoint with oil and serve immediately to the table until they have cooled down.

4) Khachapuri with cheese - recipe from unleavened dough:

For the test, you will need: 1 tbsp. Milk, egg, 3 tbsp. Flour, 4 tbsp. Lies. Butter, salt a little and sugar a teaspoon. The filling is made from Imeretian cheese or cheese, or homemade salted cheese (about 500 g).

Cheese filling can be prepared according to the previous recipe.

After sifting the flour on the board, make a groove in the middle of the slide. Smash the egg there, put the butter, sugar and salt. Add the milk and mix. Dividing the dough into two parts, roll out the thin circles. In an even layer, put a filling on each circle, protect the edges.

Heat the frying pan with butter, place the khachapuri under the lid and suture it down. Turn over when one side is baked, and continue the oven without the lid until it is ready.
