Culinary experts around the world believe that julienne is a special way of chopping vegetables for cooking salads, sauces or soups, when the products are neatly cut into thin strips. The masters of Russian cuisine on this account their opinion. They call a julienne dish made from mushrooms baked in cream under a cheese crust. True, the French call this product "kokot". Cooking is a special art in which everyone can experiment. But for this it is necessary to know the original version of a dish. Julien's classic recipe is characterized by the fact that mushrooms and chicken are used as the main ingredients. They perfectly match each other and give a unique combination of tastes. In order to prepare such a dish, you will need:

  • 350 grams of chicken fillet, onion, 400 grams of champignons and as much hard cheese, 30 grams of flour, a pinch of ground black pepper, 150 grams of sour cream, vegetable oil and 10-15 grams of salt.

The julienne classic recipe is designed for quenching in coconut dishes. If these serving pots are not available, then you can use a regular frying pan. The process will look like this:

  1. To begin with, the meat needs to be washed and then boiled in slightly salted water. This takes 25 minutes. The cooled product should then be cut as finely as possible.
  2. After this, you can randomly crumble the onion and cut the mushrooms with thin plates.
  3. Put the frying pan on the stove and reheat it well.
  4. Cover the onion and sauté it until soft.
  5. Put the mushrooms and 5-6 minutes fry the foods together on medium heat.
  6. In another pan for 3 minutes, stirring constantly, warm the flour. Add the sour cream, pepper, salt and bring the mixture to a boil.
  7. To mushrooms and onions add chopped chicken, mix and shift everything into a special form. If desired, the products can be baked in the same pan.
  8. Pour the contents of sauce and 15 minutes to warm on low heat.
  9. The product is put in the oven and another 15 minutes bake it there at 190 degrees.
  10. Sprinkle a lot of grated cheese and leave it in the oven for another 3 minutes.

Do not forget that julienne - it's still a dish of baked mushrooms. Adding different types of meat in it is not necessary. Therefore, if desired, you can cook an equally delicious julienne with mushrooms in a frying pan. The following ingredients will be required:

  • 100 grams of fresh mushrooms 10 grams of flour, 2 onions, 50 milliliters of cream, 40-60 grams of butter, salt, 50 grams of cheese and a little ground pepper.

The process technology slightly resembles the previous versions:

  1. First of all, the onion should be finely chopped, and the mushrooms - very finely chopped.
  2. In a frying pan, heat the oil and fry the prepared foods in it for 7 minutes, adding salt and pepper. At the very end, you need to add flour and mix it well.
  3. Products pour the cream, sprinkle with grated cheese on top and put in an oven, heated to 150 degrees. Baking is best done in a serving bowl. If it is not available, then you can use the same pan in which the products are fried. The process ends at the moment when a pronounced ruddy crust appears on the surface.

This dish must be served hot almost with any side dish or without it.

"Happy" julienne

As a component for baking with mushrooms instead of chicken, you can use any poultry meat. But nutritionists still advise choosing for this particular turkey. The main reason is that its meat contains a huge amount of tryptophan, a unique acid, which is responsible for the production of endorphin (a hormone of happiness). However, for a chef, such a change does not change much.

So how to prepare a julienne in a pan with a turkey? To do this, you need a whole set of specific products:

  • 300 grams of fresh mushrooms (champignons), 400 grams of turkey fillet, 250 grams of milk and sour cream, salt, ½ butter pack, 30 grams of flour, ground black pepper and 50 grams of cheese (always solid).

Now you can start working:

  1. First you need to cook the sauce. To do this, first of all the flour should be fried until the color changes on the heated dry frying pan. Then it must be cooled, and then, adding oil, salt and milk, bring to a boil. In the hot mass to introduce sour cream. After that, you need to boil the mixture again. Ready sauce can be temporarily set aside.
  2. Mushrooms pick, rinse and cut into thin plates.
  3. Washed and dried napkin turkey should be carefully cut into strips.
  4. Cheese grind on a large grater.
  5. In a frying pan heat the oil and fry for a few minutes pieces of meat.
  6. Add champignons, spices and continue heating until the food is ready.
