Mimosa salad in popularity during the Soviet time competed on the festive table with such favorite dishes as olivier, cold meat, herring under a fur coat or vinaigrette. The tradition to put it on the table in our days has not changed. This salad is good not only because with the cheapness of ingredients and the speed of cooking it is really very tasty and nutritious, but also because it is beautiful in appearance. Bright-yellow "cap" dishes effectively looks on the background of other dishes. She makes an elegant festive "bouquet."

Varieties

There are many options. One of the most common is the salad "Mimosa" with saury. This is a small oceanic commercial fish, which is highly valued in the food industry due to its excellent taste qualities. The peculiarity of this dish is that it includes fish. You can make "Mimosa" with any, except, of course, herring. For this, even fried, boiled or smoked fish will do. But it was the salad "Mimosa" with saury that fell in favor of gourmets more than others.

First salad

We take a jar of saury, we lay out the contents in a deep salad bowl, only so that the oil does not get much. We knead the fish with a fork. From above we make a frequent grill from the mayonnaise of your favorite kind. Before this fish can be sprinkled with pepper for a better taste. Then we take the proteins from 4 eggs and immediately rub them with a grater into the same salad bowl. Top again with mayonnaise, you can slightly salt. Then comes the turn of the carrot. Two or three pieces of medium size, boiled and brushed, also three, then greased with mayonnaise. Then finely chopped onions. Not bad, if there is a young, with green feathers. With it our salad "Mimosa" with saury is more delicious, and it will turn out more beautiful. So, the onion crumbles, quite a bit of salt (just do not overdo it!), Smeared with the same mayonnaise. It is the turn of the potato. Enough of three medium-sized potatoes. They are cooked in a uniform, cleaned and tindered on a grater. Here you can do this: one potato of the previous layer was sprinkled, a bit of pepper was added, then a teaspoon was sprinkled with oil from the fish. Then again, the potato, then again the oil. Thus, the salad "Mimosa" with saury will turn out juicier and with a more intense taste.

The final touch is the top of the dish. Rub 4 yolks on the grater and carefully sprinkle them with a salad on top. On the middle you can lay a flower from mayonnaise or carved from fresh cucumber, tomato, olives. Or stick a couple of onions, a sprig of parsley, etc. Let be infused with half an hour, and you can enjoy, "Mimosa" with saury is ready!

Second salad

But this variety is considered classical. For cooking you need five eggs, 100 grams of any cheese, naturally, hard. Of course, every housewife uses the sort, the taste of which knows well. You will also need butter, also 100 grams. It must be hard, before lying down in the freezer. Naturally, a can of canned fish in oil. One onion or a bunch of green onions, a mayonnaise package.

All components, as in the previous version, are rubbed on a grater with large divisions and laid out in a salad bowl in layers, smeared with mayonnaise in this order: egg white, cheese, half of canned mashed saury (or other fish), finely chopped onion, butter, Part of canned food, yolk.
