Cookies "Savoyardi" - a universal dessert

The authors of this simple dessert - the bases are disputed by the French, Italians and even Americans. They say that even in the eleventh century Bertha Savoy invented airy thin biscuits, perfectly absorbing French syrups. Later, her descendants were tempted by "Lady's fingers", what else is called biscuit Cookies "Savoyardi", the courtiers of the best European royal houses. Even the great Peter could not resist, having enticed the French confectioners.

According to another version, "Savoyardi" cookies were created specially for Cosimo III Medici. More precisely, not even the biscuit, but the dessert Tiramisu, the base for which it was. Both sides are opposed by the Americans, who say that the author of the "Lady's fingers" was Italian Carmintonio Yannacone, who immigrated to the US. It was he, in the third version, who created such a divine biscuit Cookies "Savoyardi".

How to bake cookies

To create 30 pieces you will need:

  1. Eggs, previously divided into proteins and yolks, - 3 pieces;
  2. Sifted flour - 90 grams;
  3. Salt - enough pinch;
  4. Sugar - 100 grams and 30 grams of powdered sugar (you can prepare yourself or use it with cocoa or vanilla);
  5. Butter - for lubrication (to reduce caloric content, use specialized baking paper instead of oil).

Separate the egg yolks, gradually adding sugar to them. As soon as the mass becomes uniform, it should be uniformly introduced sifted flour mixed with salt. The mixture should be dense, but airy, so the whipping process should be done with a mixer or a special blender attachment.

After the yolk mixture was formed, heat the oven. For a gas cooker the recommended temperature is 150 degrees, for an electric one - 170. At the same time, it is necessary to beat the deferred proteins into a foam of the same consistency as the yolk mixture. Then combine the two parts, bringing the biscuit dough to a homogeneous mass.

The baking sheet is lined with baking paper or smeared with butter. Next, the dough is filled into the confectionery syringe (and in the absence thereof in a simple bag with a cut off tip) and laid out on a baking sheet in strips of 10-15 cm. The dough should be sprinkled with half of the cooked powder and wait until it dissolves in it. This process can take about three minutes. After that the baked cookies of "Savoyardi" are sent to the preheated oven for 25 minutes before reaching the golden color.

As soon as the "Lady's fingers" are ready, they are taken out of the oven and again sprinkled with powder.

Secrets of how to bake a newbies cookie

Apparently, the process of preparing this delicacy is simple enough. However, masters of desserts offer newcomers some simple tips that will make baking not only delicious, but also simple.

The first tip is to use only chilled eggs. This will help not only to easily separate their parts, but, in addition, will make the whipping process easy enough.

The second tip is to use a mixer to form a homogeneous mixture. This has already been said before, but still worth repeating. Manually this process will take more time, and, in addition, you can not achieve the desired result.

Third tip - improvise. Yes exactly. Using a confectionery syringe does not always guarantee the desired result, and therefore apply a rectangular shape for baking and simply pour the dough into it, first laying out the bottom with baking paper. After the "Lady's fingers" are ready, the cake is cut according to the desired size.
