Almost every inhabitant of Karelia knows the recipe of the wickets . After all, such products with delicious and delicate filling are the traditional dish of this republic. For those who do not know how to cook Karelian pies, the following is a step-by-step way to create them.

A detailed recipe for wickets filled with potatoes

Necessary ingredients for the test :

  • Rye sifted flour - 1 glass full (can be slightly more);
  • Soda canteen - a small pinch;
  • The highest grade wheat flour - ½ faceted glass;
  • Curdled milk or lightly sour milk - 1 glass;
  • Sea salt is fine - add at personal discretion;
  • Egg yolk - for lubrication of finished products.

Preparation of the dough

Wickets Karelian, the recipe of which we consider in this article, are made on the basis of a simple test using curdled milk. In order to knead a thick mass, you need to pour the sour milk into a metal bowl, lightly heat it, and then extinguish in it a pinch of baking soda.   • Average potatoes - 6-8 pieces;

  • Fat milk - 1 glass;

Process of preparation of a vegetable filling

It is worth mentioning that the recipe for wickets can include not only potato stuffing, but also boiled rice. However, we decided to give you a way to prepare pies with crumpled vegetables. After all, such products are much more delicious and full.

In order to make mashed potatoes, you should take a few tubers, thin them and boil them in salt water. Further, the vegetable is required to deprive the whole broth, pour the fatty milk to it, lay the butter and break the chicken egg. All these ingredients should be pounded in lush and air purée, using for this purpose a cricket.

Forming a dish

After the dough and the filling for the dish are ready, you should proceed to the construction of wickets. To do this, take a small piece of the base and roll it into a thin oval shape.
