Traditional Japanese rolls and sushi have become a very popular dish in Russia. Numerous restaurants and cafes with intricate Japanese names vying to offer these little "things" of rice with filling, wrapped in seaweed. The increased popularity of Japanese dishes has led to the fact that in any supermarket you can buy now semi-finished products and various preparations for making rolls at home - algae, special sauces, rice, etc. Therefore now it is quite possible to master this technique in the home kitchen. There is only one "but" - no matter how hard we try, we can not get real Japanese rolls, but something like that, at least, looks like rolls and tasty enough can turn out.

The most important and mandatory ingredient of rolls is rice. You need to be able to properly cook the rice for rolls. Preparing rice with a certain degree of preparedness and stickiness means the success of this activity. So, how to cook rice for rolls? Preparing it begins with a thorough rinsing of cereals in several waters. Do not forget that rice needs to buy a special variety, designed specifically for sushi. After the croup has been thoroughly washed, it is poured into a colander in order for the glass to water. After that, the washed rice is dried with a towel, sent to a pan and poured with water in a ratio of 1x1. The pan is put on a strong fire, brought to a boil and rice is boiled for 3-4 minutes under a lid on high heat. After that, the fire is reduced, and continue to cook on moderate heat for another 5 minutes. The lid should not be removed, and it is also not necessary to interfere with the rice. The final stage of cooking continues for 8 minutes on low heat. Then remove the rice from the fire, cover the pan with a towel and let stand for about 10 minutes. At this time, you need to take care of the sweet and sour sauce, which is wetted with rice for rolls. Preparation of the sauce takes just a few minutes. In a deep cup mix with a fork or broom vinegar table, sugar and salt and heated up to about 80 degrees, until all components are dissolved. Then this mixture is moistened with the present rice for rolls, the preparation of which at this stage will be completed. Now it can be added various fillings and wrapped in algae.

Step-by-step preparation of rolls. Let's try to wrap the cooked rice with a salmon roll and an omelette. To do this, put a soaked algae leaf on a bamboo napkin or a rug, on which a thin layer of rice is applied. We turn the nori rice leaf down and place on it pieces of salted salmon, a thin layer of omelet and freshly squeezed cucumber. We wrap the rug with the roll, and carefully give it the necessary shape. Then we remove the roll from the rug, roll in sesame or small caviar (the Japanese use the caviar of flying fish, and we can take salmon or pike caviar ), and then cut into small portions. The omelet for this roll is very easy to prepare. The egg is beaten with two tablespoons of water, the mixture is fried in a frying pan as a pancake on both sides.

Wrap in rice and seaweed can be a variety of products. What you need to prepare rolls. Firstly, rice and nori seaweed (they are bought in the store in a pressed form and soaked in water). Secondly, all kinds of fish delicacies, shrimp, other seafood. Thirdly, soft cheese (Philadelphia), a variety of fresh vegetables (peppers, cucumbers, etc.).
