Recipe from Stalik Khankishiyev: we cook pilaf and lagman

Eastern cuisine has traditionally included meat, fragrant spices and herbs in its meals. A well-known culinary specialist and connoisseur of dishes of Central Asia, Stalin Khankishiyev knows how to properly prepare real pilaf and lagman.

Lagman: a recipe from Stalik Khankishiyev

Ingredients required for lagman preparation:

For broth :

  • Lamb bones, brisket, neck or shank - about 1.5 kg;
  • One carrot and onion head;
  • 3 small tomatoes;
  • Salt and black pepper ;

For noodles :

  • 1 kg of flour;
  • 3 fresh chicken eggs;
  • 1.5 tbsp. (About 300 ml) of water;

For sauce :

  • Vegetables: turnips, celery, sweet peppers, carrots, onions, garlic - about 1.5 kg;
  • Pulp lamb about 0.5 kg;
  • Tomatoes (or tomato paste) - 3 jokes (or 2 spoons);
  • Coriander, zir, parsley, black pepper, salt, dill.

Technology of preparation

The recipe from Stalik Khankishiyev is simple. First you need to knead the dough from the specified number of ingredients. It should be hard. Leave it for an hour, then cut into pieces.
