Pancakes with salmon and cheese

It's always nice when a soul company gathers at the table. There is a friendly conversation, there is a discussion of yesterday's match or just a conversation "heart to heart". To even more decorate the festive table and give it an originally Russian flavor, you can cook, for example, pancakes with salmon and cheese.

Pancakes are a common dish in all parts of the world. Every nation has its own secrets of preparation and specificity. Russian pancakes are an invariable attribute of folklore and national cuisine among the Slavs. Pancakes thin, light, transparent - this is the pride of the mistress. Everyone is ready to brag that her recipe is the best, because it was passed down from generation to generation, was not disclosed to anyone and was performed with veneration of traditions.

For our dish (pancakes with salmon and cheese), prepare a classic dough for thin pancakes. To do this, you need the following ingredients: 250gr. Flour (preferably wheat), 2 eggs, 200 gr. Milk or kefir and as much boiled water, 1/2 teaspoon of salt, sugar. It is better to take kefir with water in equal quantities, then pancakes will be obtained with a milk flavor and will be better baked. In a deep bowl, sift through the fine sieve flour, add 100 grams of kefir and 100 grams of water, and mix with a mixer at low speed, from the wall to break the lumps. In another bowl, beat the eggs and salt with a mixer until they foam, pour them into a saucepan. Stir the mass until smooth. The dough turned out thick enough, but without lumps, now add the rest of the kefir and water. Once again, bring the dough to a homogeneous mass to make it liquid. Let's brew for 5-7 minutes. The medium diameter pan is heated on low heat, grease the frying surface with vegetable oil and pour in 3.5 tablespoons of dough, distributing it in a uniform layer over the frying pan. Bake a pancake for 1.5 minutes on each side. We remove the patisserie spatula on a flat dish and cover with a lid so that they are steamed and not fragile when twisting

Next, we take salted salmon and cut into longitudinal strips 10-12 cm long and 3-4 cm thick. To cut the fillet smoothly, in advance, for 20 minutes, we put it in the freezer. To prepare pancakes with salmon and cheese, you need to decide on the type of cheese. For this dish is best suited creamy or pasty cheeses with a smearing consistency. If there are none, then you can take fat cottage cheese, pass it through a sieve, rubbing from small lumps, add 100 grams of high-fat cream (at least 20%) and mix the mass. Grate it abundantly with chopped herbs.

Spread the pancake on the work surface, half of it with cream cheese, applying a thin layer and spreading a knife, put a piece of fillet and wrap the pancake. Roll of pancakes with salmon is ready. We put it in the refrigerator for 2 hours. For a beautiful serving cut into pieces, then lay out on a dish. Next, decorate all with greens, cubes of bell pepper and cherry tomatoes.

Tartlets with salmon and cheese are analogous to the dish described above. This is a more adapted recipe for the reals of our era. Life is dynamic and saturated, so to save time, we will simplify the recipe "pancakes with salmon and cheese" as much as possible and use ready-made semi-finished products. To prepare the dish you need a package of unsweetened tartlets, which are sold in the store. And the filling is now prepared from the following ingredients: chicken eggs - 4 pieces, rennet cheese - 150 grams, dill greens, medium-calorie mayonnaise - 100 grams. To do this, we chop the hard-boiled eggs with a fork, add the grated cheese on a small grater, chopped greens of dill and mayonnaise for refueling. We mix the mass until uniform. We spread the filling into the tartlets with a teaspoon or squeeze out of the pastry syringe. Strip the fillets of salmon with a rose and put it in the middle of the tartlet.
