  1. Mushrooms (3 kg) must be cleaned, cleaned of debris and thoroughly washed. Then cut off the roots and gently peel off the skin (thin film) from the hats, cut each champignon into two longitudinal pieces.
  2. Prepared mass put in a clean container and pour water, acidified with citric acid, and soak for about half an hour.
  3. Drain the water and pour hot solution (for 1.2 liters of water - one large spoonful of salt) and boil for about 2 hours, while adding citric acid and sugar (with the formation of foam, it must be removed with a noise).
  4. A few minutes before the readiness to add a little vinegar and, if desired, paprika and other spices.
  5. Marinated mushrooms for the winter to be disintegrated into sterilized glass containers and cork.

Procurement of salted mushrooms

Champignons for winter can be harvested in a salted form, for this you need about 8 kg of mushrooms, they are peeled, washed and piled in a container. Then cover with salt (400 g) and mix, insist 0.5 hour. Onion (500 g) is cut into rings, and hot pepper (500 g) is cleaned of seeds, washed and cut in a similar way.

After that, prepared mushrooms and vegetables are laid in cans, previously sterilized, alternately in layers, with the top should be champignons. Pour vegetable oil and add spices as desired. Capacities are closed and stored in a cool place.

Fried canned mushrooms
