Then put the whole fish in a large pan, fill it with a mixture of oil, water and wine, add the spices and stew for a while until it becomes soft, that is, it will not reach the ready state.

Recipe # 2

Prepare the stuffed dessert. Take one fish weighing about 300 grams, five cloves of garlic, three tablespoons of breadcrumbs, 200 grams of potatoes, four sprigs of rosemary and parsley, two bay leaves, 30 milliliters of cognac, five tablespoons of olive oil, pepper and salt.

Preparation of fish dorado according to this recipe is as follows: first chop the garlic, parsley - wash, dry and cut very finely, you need to chop and laurel leaf. Now mix in the bowl of breadcrumbs, bay leaves, parsley and garlic, add pepper and salt, a tablespoon of butter. All this should be mixed.

Fish should be cleaned, get rid of all the insides, then rinse it and thoroughly dry it. Then on the carcass make two cuts across from each side. In them, and you need to put the previously prepared mixture. Sprinkle the fish with oil, wrap its tail with foil, so it does not burn when baked. Now put the dorado on the baking sheet, and send it to the oven, heated to 170 degrees, for half an hour. During this time, you need to turn the carcass once.

While the fish is languishing in the oven, deal with potatoes. Clean it, rinse it, cut it into large pieces, put it in boiling water, pre-salted. After a few minutes, take it out with a noise and put it on another baking sheet, place the chives in the corners, pepper your potatoes, season with salt and send it to the same oven where the fish is baked for half an hour.

Approximately three minutes before the full readiness of the Dorado, it must be sprinkled with cognac. It is served in a dish, decorated with herbs, and with baked potatoes. This recipe for dorado is suitable for meeting guests.
