Grilled vegetables in the oven

Ingredients:

4 eggplants, 2 zucchini, 2 bell peppers, 2 tomatoes, a mixture of peppers, salt, olive oil.

It is permissible to use a microwave oven, however, if you want to cook grilled vegetables in a microwave oven, then consider that you need a quality grill, since without this the vegetables will be simply boiled.

If your plate does not have a grill, then you can prepare grilled vegetables in the oven in the following way.

Wash them, oil them lightly and puncture them in several places. Then place each piece in the foil so that it is close enough to the surface of the vegetables.

The oven should be warmed to 200C, put the wrapped vegetables in the foil on the grate and put it on the oven for 30 minutes. Then turn off the oven, but immediately take out, leave them a little bit to stand inside.

You can also cook grilled vegetables in the oven according to the following recipe.

For 300-400 ml marinade:

  • 6 medium potatoes,
  • 2 large peppers,
  • 1 eggplant,
  • 1 zucchini,
  • 300 grams of mushrooms.

Before you cook the vegetables in the oven for this recipe, first do the marinade. Take about 250 ml of olive oil, a teaspoon of wine vinegar, who loves soy sauce, you can take it with a teaspoon, as well as spicy herbs, such as basil, rosemary, you can red onion. In general, all to taste. Only it is better to take fresh herbs, and not dry. Everything must be mixed. Insist a marinade for three hours. At this time, prepare the products. We need to boil the potatoes in their uniform, peel the Bulgarian pepper, zucchini, eggplant, mushrooms. Boiled uncooked potatoes should be divided into 4 parts, first cut the pepper in half, then each halve for another 4 parts; Zucchini and eggplant cut into circles; Mushrooms or in half, or also in 4 parts. We put everything in a deep enough dish and pour the marinade for no more than 30 minutes. marinate. Sometimes we mix, so that the marinade gets on the vegetables evenly. We spread the pickled vegetables on a dry baking sheet and put it in the oven to bake.

However, it is not necessary to cook grilled vegetables in the oven. If you do not have a grill in the oven, you can cook the vegetables on the stove using a grill pan.

It is best to purchase a grill pan with high sides, with a lid and removable handles, so that at any time you can pour the products in it with sauce and place in the oven.

Eggplants, dairy patties and zucchini are best for this dish. If you want to fry tomatoes, then they should be enough fleshy varieties.

Vegetables should be washed, cut the peduncles, much towel dried. Cut them into rings with a thickness of not more than 1 cm.
