Rassolnik for the winter (the recipe is described a little lower) is well prepared for those cases when there is no free time to make a tasty and satisfying lunch, and the guests are already on the way. It should be specially noted that the soup, created on the basis of such a preparation, does not differ from the traditional dish, cooked from raw ingredients. In addition, for the preparation of this dinner you will only need to boil potatoes and any meat product (beef, pork, etc.).

Rassolnik for the winter: the recipe for cooking a simple billet

Necessary ingredients for the dish:

  • Fresh cucumbers of any variety (you can use curves and ugly ones) - 4 kg;
  • Pearl barley peeled - 1.5 cups;
  • Onion white onion - 550 g;
  • Sunflower oil - glass;
  • Carrots fresh small - 550 g;
  • Tomato hot sauce - 500 ml;
  • Common salt - 4 large spoons;
  • Vinegar 9% table - 4 large spoons.

So, how to prepare rassolnik for the winter? First, you should treat the pearl barley well. It must be touched, and then carefully washed in a sieve, rubbing with hands, to the transparency of the water. Further, the peeled cake should be soaked in a bowl for 12-15 hours. This procedure will significantly reduce the process of boiling the barley on the gas stove. After the product has been processed, it must be prepared in salt water until completely soft.

Vegetable processing

Rassolnik for the winter, the recipe of which is quite simple, requires the use of ingredients such as white onion, fresh cucumbers and carrots. All these components should be washed and cleaned. Next, the bulbs should be chopped into half rings, and the carrots and fresh cucumbers should be rubbed on a large grater. At the same time, the last product should be placed in the pelvis and kept in it for a while, until the vegetable gives its juice.

Heat treatment of the workpiece

If you comply with all the requirements for the creation of such a canned product, then in the future you will certainly get a rich and delicious rassolnik. Billets for winter with the use of pearl barley and fresh ingredients should be subjected to heat treatment. To do this in a bowl with a thick bottom, pour in the sunflower oil, and then put the grated carrot and white onion. After the vegetables are slightly fried, they need to pour chopped fresh cucumber along with the secreted juice. After extinguishing the ingredients after boiling for a quarter of an hour, boiled pearl rump, tomato sauce and table salt should be added to the pan. In such a composition, it is advisable to cook the products for another 40 minutes. Finally, the dish needs to be poured into vinegar and removed from the fire.

Conservation process

Rassolnik for the winter, the recipe of which was described above, should be distributed over glass sterilized jars of 500 ml size. This volume is enough to weld an average pot of rich soup. Also it is required to boil out metal covers separately. It is advisable not to store the rolled workpiece for more than 12 months in a cellar or in another cool place.
