What is mousat for knives, and how to use it

When preparing food, it is very important that the knife is sharp. This not only allows you to easily cut any products, but also much safer than using a blunt tool. That's why every professional chef has at his workplace musat for knives, and more often than not one.

Why is it needed? The point is that in the process of work the cutting edge of the knife is slightly "wrinkled", because of what the tool loses its qualities. Musat helps to solve this problem. He aligns the edge and returns the knife to the sharp edge.

What is Musates

To sharpen the knives use various tools. These are stones, mechanical and electrical sharpeners , etc. However, musat is becoming more popular today. What is it?

This is a tool rod, made from various materials, with a handle. And use it, as already noted, to align the working edge of the knives.

Characterized by such tools, among other indicators, roughness of drawing. It influences how smooth or rough the surface of a sharpened knife will be.

Metal crumbs, which are formed when sharpening or straightening the tool, will not fall on the floor or on the table. The fact is that the surface of any musate is usually magnetized. Due to this, all the "unnecessary" particles remain on it. After work, it remains only to wipe them with a damp cloth.

Kinds

These devices are of several types. And they differ in form and in material from which they are made. So, there are round mousses. They also include oval devices. Another variety in the form of execution - faceted instruments. This group includes flat and tetrahedral musates.

Each type of instrument has its own merits. So, for example, the round mousat weighs very little, and the oval makes more contact between its surface and the edge of the cutting device, which makes the grinding more efficient. However, the greatest possible result is still provided by flat tools that provide the most complete line contact. Well, tetrahedral devices are, you might say, a combination of two kinds of musates.

The surface of the rod can be made of such materials:

  • Ceramics. Such knife musat is also used for sharpening the cutlery, and for grinding it.
  • Metal. A tool with frequent incisions. Applicable only for sharpening knives.
  • The so-called "diamond". On their surface there is a diamond crumb. They sharpen knives, but do not rule.
  • Mixed. One side of such a rod will be rough, and the other - smooth.

How to sharpen knives with musat. Method 1

Professionals usually rule knives with muskat directly on the weight, not resting the tool in anything. In this case, the whole process consists of the following stages:

  1. The heel of the knife is placed on the upper end of the moussat. Cut the cutting edge to yourself.
  2. Move the blade towards you on the instrument. The angle between the surfaces should be 20 degrees. Strongly press on the knife is not necessary. We press it easily. How exactly - you will feel yourself, a little training.
  3. Musat for knives is equipped with a special guard, which will not allow the cutting tool to injure your hand. It is near it that the tip of the device stops after the completion of the second stage.
  4. Musat is located above the knife and presses the heel of the latter to the tip of the first. Gently pull the knife on yourself. Do not forget about the angle.
  5. We repeat the previous actions in a circle 3-4 more times. However, if your knife is fairly blunted, you will need to "grind" it a little more until it becomes sharp enough.

How to check if the tool is sharpened? Try cutting the newspaper sheet. If the knife does not cling to it, but smoothly passes through it, then you did it right. Well rinse it with warm water (you can use a cleaner), dry with a towel. Do not forget to remove the steel particles from the moussat with a wet piece of cloth.

Rule the knife with musat. Method 2

If for the first variant some skill is required, then this method is often chosen by those who first try to use the knife musat. So, we perform a number of the following actions.

  1. The tip of the muskat is resting on the table or cutting board strictly vertically. Slightly tilt it to the left about 20-25 degrees.
  2. The knife is located at the handle of the musat, to the right of it, the cutting edge is directed downwards. We move from the heel of the first to its tip, sliding down towards the table. We do not touch the latter.
  3. We return to the starting position. Only now the muskat is tilted to the right, and the knife is on the left.
  4. Again, we hold the cutting edge from top to bottom. Hold the angle between the tools at 20 degrees.
  5. Repeat these steps until the knife is sharp enough. After that, it is washed, and the musat is well wiped with a damp cloth.

Conclusion

Each self-respecting culinary master already has in his kitchen this indispensable and easy-to-use appliance. You now also know how to properly sharpen knives with musat, and what these devices represent, so you can easily make a choice and get a new assistant.
