Sumac - seasoning of oriental cuisine

Sumaha is a seasoning made from dried berries. They grow on a bush, which is called sumac and grows throughout the Mediterranean. Most often these spices are used in sauces and marinades. This seasoning of dark red color can be found in any Turkish market. Culinary experts use it in Oriental and Asian dishes.

With regard to the taste, the seasoning of sumac has an acidic astringent taste. In many countries it replaces the lemon. This seasoning is in perfect harmony with fish, poultry, beans and vegetables. In Iran, for example, add it to the rice. In India and Lebanon, it rubbed meat. In our country, it can be found in markets, on trays where spices are sold.

The recipe for healing infusion from sumac is as follows: it is necessary to mix half a teaspoon of seasoning with a glass of boiling water, insist for 15 minutes. Take it necessary, when it cools, in small sips.

When you buy a seasoning, pay attention to the color that should be saturated, and the size of grains in the powder: they should not be small. Let's look at the recipe for chickens using sumac. We need the following ingredients:

- Chicken - 2 pieces;

- Crimean onion - 4 pieces;

- Olive oil - 0.5 cup;

- Pita - 2 pcs .;

- sumac seasoning - 4 tsp;

- salt and pepper;

The cooking process is as follows: wash the chickens and grate on all sides, inside of them, including the wings, so that they do not stick out. In the frying pan fry the chicken until golden crust. Next, it is necessary to thinly chop the onion and fry it in the same pan for 8 minutes. We add sumac, mix thoroughly and fry for 2 more minutes. Pete needs to be cut in a circle and then in half. Take the form in which you will bake, and put there 2 pieces of pita, a little onion, chicken, again onions. Top with oil from the frying pan. The final touch is to cover the bird with a pita and bake for 1.5 hours in the oven, which needs to be heated to 170 degrees.
