Souffle from zucchini - just delicious!

Soufflé from zucchini is a delicious and simple dish that can be used for both children's and dietary meals. Its preparation is the best solution to the problem for people who do not know where to put a rich squash crop. It's no secret that this vegetable is very common, as it is easily digested and has a number of medicinal properties.

To prepare soufflé from zucchini, you will need the following ingredients:

  • 0,5 kg of courgettes;
  • 0.3 kg of smoked chicken;
  • bulb;
  • 3 eggs;
  • baking powder;
  • 2 tablespoons (without top) of cornstarch;
  • 100 ml of yogurt;
  • Salt, pepper, spices to taste;
  • vegetable oil.

The first step is to warm up the oven. The optimum temperature for cooking soufflé from courgettes is 170-180 degrees Celsius. While the oven is warming, prepare the bulb. It must be cleaned and cut into very small cubes. Then the onions are fried on a small amount of sunflower oil.

When it is ready, the smoked chicken breast should also be finely chopped.

Zucchini is cleansed of skins and seeds. The rougher the peel, the more carefully and more it needs to be cut. It is best to prepare a soufflé of courgettes suitable for young vegetables. If the skin is too thin, it can not be removed at all. Zucchini rubbed on a large grater, poured and mixed. Alternatively, you can skip the vegetable through a meat grinder or grind it with a submersible blender. The resulting mass should be left for a few minutes, so that extra liquid comes out of it. After a while, squeeze the puree well and drain the juice.

The next step in preparing a soufflé of zucchini touches the eggs. Yolks are separated from proteins, after which the first, chicken, zucchini and yogurt are mixed. This mixture is salted and seasoned to taste. Then add starch and baking powder into it, mix until smooth. Proteins are beaten with a mixer in a strong foam. It should be such that when the bowl is turned over, the whole mass remains at the bottom. Proteins interfere with the future soufflé from courgettes. Do this slowly and carefully, so that they retain some air.

The finished mass is transferred to a prepared baking dish and leveled. To avoid large bubbles, you need to tap the bottom of the container against the surface of the table. When everything is ready, the soufflé from the zucchini, the recipe of which, apparently, is very simple, is placed in the oven. It baked for about 40 minutes. When the contents of the form are browned, the soufflé is transferred to the plate. After a while, it falls off. Slightly cooled dish can be served to the table!
