Simple meals from zucchini and eggplant

Stew of eggplant and courgette
List of ingredients (for 7 servings):
- 250 g of onions;
- 10 grams of garlic;
- Eggplants and zucchini (470 g);
- 20-50 ml of water;
- 350 g of tomatoes;
- Vegetable (refined) oil - 2-3 tbsp. L .;
- 1-1.5 tbsp. L spices.
Preparation:
1. We wash vegetables with water from the tap. First we take aubergines, remove the skin from them and cut them into small cubes. If you bought a young vegetable, then the skin can not be cleaned. We proceed to processing zucchini. They need to be cleaned thoroughly with a sharp knife, and then cut into cubes.
2. Dishes from zucchini and eggplant assume the use of other vegetables, for example, onions. So, take a few bulbs, clean them and cut them as small as possible. We put on a plate a deep frying pan and pour in the specified amount of oil. Now lay out the pieces of onions. Fry for 3-5 minutes, setting the average fire.
3. In a pan with onions, add spices for satsivi. We mix it all for about one minute. Next, lay out zucchini with eggplant. Using a wooden spatula, mix the ingredients. Cover the lid.
4. It remains to finely chop tomatoes and add them to a pan to other vegetables. You can extinguish all this without a lid. At the end of the process, take the garlic, clean it and grind it. Baked eggplants with courgettes
Very soon an important event is planned (anniversary of the wedding, birthday, all-Russian holiday), but you do not know what to surprise the guests? A great option will be dishes from zucchini and eggplant. They are not only tasty, but useful.
Required products:
- Onion - 1 piece;
- A few medium-sized aubergines;
- 250 g of white bread;
- Olive oil (1 tbsp is enough);
- two tomatoes;
- Garlic (several denticles);
- Two bell peppers (the desired red color);
- 250 g of feta cheese ;
- A bunch of parsley;
- Oregano (fresh or dried);
- salt.
Practical part:
1. Cut the eggplants in half. Each half must be rubbed with salt. Leave in this form for 30 minutes. This will get rid of bitterness. Form the juice carefully drained into the sink. Preheat the oven to 200 degrees. We lay foil on the baking tray. On it we spread eggplants (peeled upwards). Bake for half an hour. Then we take out of the oven and let it cool. From each eggplant we take out the flesh, but not all, but only 2/3. All that we took out, we cut.
2. We take a large frying pan, put it on the fire and fry in it vegetables (peppers, tomatoes, onions). Add the chopped garlic and oregano. Top with a lid. After reducing the heat, simmer the vegetable mixture for at least 10 minutes. Do not forget to stir the dish. After this time, the lid can be opened, allowing the moisture to evaporate.
3. Remove vegetables from the plate, add cheese and parsley. Solim and pepper. Thoroughly mix the resulting mass. We will fill it with each eggplant. And you need to drip a little olive oil. We send the dish to the oven for 30 minutes.
