Plov is one of the most popular oriental dishes, which has a very ancient history. This dish always takes the main place on the table, and its preparation is considered a special art. In the East, no solemn event can not do without an amber aromatic dish. In this article we will talk about how to cook pilaf with mutton and dried fruits.

Which rice to choose?

It is difficult to give an unambiguous answer to this question. Every connoisseur of Oriental cuisine can have his own preferences. Traditionally, pilaf with mutton and dried fruits is prepared from solid rice. Its grains are transparent, have a milky white hue and an elongated shape. In such a croup of amylose - a substance that gives rice friability. However, in order to prepare a dish from such rice, it will take much more time. The amount of liquid that must be added to pilaf with lamb and dried fruits, too, will have to increase. The best rice for making a dish is a devzir. Ingredients

In order to make a real pilaf with mutton and dried fruits, you will need the following products:

  • Rice (long grain) - 2 cups;
  • Lamb - 500 grams;
  • Carrots - 4 pieces;
  • Onion - 3 pieces;
  • Vegetable oil - 100 grams;
  • Fat (beef or lamb) - 100 grams;
  • Raisins - 100 grams;
  • Dried apricots - 100 grams;
  • Prunes - 100 grams;
  • Barberry, salt, greens - to taste;
  • A mixture of spices for pilaf - to taste.

Cooking method

The recipe for pilaf with dried fruits assumes the following actions.

  1. First, washed dried fruit (dried apricots, raisins and prunes) for swelling is poured with water for one hour.
  2. After that, you need to wash rice in several waters, put it in a deep container, fill with water and leave for 30-40 minutes.
  3. Purified carrots need to be cut into long blocks, and onions - half rings.
  4. Wash and cut into small pieces of mutton.
  5. Take a saucepan with a thick bottom and walls. A dish made of cast iron is good. The most suitable option is cauldron. It should be laid pieces of lamb and fry them in a warmed mixture of lamb fat and vegetable oil.
  6. Once the meat is covered with a crust, you need to add a bow. Vegetables should be roasted until transparent. This will take about five minutes.
  7. After this, add carrots to the casserole and fry for about ten minutes.
  8. Then swollen rice should be thrown on a strainer or colander, so that the glass water.
  9. Pour into the cauldron with meat and vegetables two cups of boiled hot water, add a mixture of spices, salt, barberry, mix all the ingredients thoroughly and bring to a boil.
  10. Lay the dried fruit on the meat, place a layer of rice on top, gently flatten the surface of the cereal and slightly crush it with a spoon.
  11. After this, carefully, trying not to break the layer of rice, add another glass of boiled water to the cauldron.
  12. We shave the future pilaf, without covering it, with moderate fire until the liquid is completely absorbed into the rice.
  13. Next, you need to pierce pilaf with mutton and dried fruit in a few places and in the resulting grooves pour one tablespoon of boiled water. Close the lid with a lid.
  14. Further, the fire on the stove should be reduced to a minimum and the dish is stoked on it for another half an hour until ready.

Pilaf with dried fruits and meat is ready! Before serving, it must be mixed and placed on a plate in the following order: first rice, then dried fruits, then onions and carrots, and on top - lamb. You can sprinkle the prepared dish with chopped herbs.
