Terroir

Chardonnay is valued for its elegance, subtlety and "minerality". The second grade is Pinot Noir. Its natural strength is ideal for assembling and predisposes the wine to aging. A gentle, unobtrusive taste of berries gives softness and allows you to achieve harmony for some cuvée.

The company also produces mono-ample types of champagne. A vivid example is the "Vintage", created from Pinot Noir, which was grown in Montagne de Reims. And lovers of light champagne can recommend "Blanc de Blanc". This one hundred percent Chardonnay, who saw the light of the Grand Cru in Aviza and Mesnil-sur-Auger. But usually three varieties of grapes are assembled in such proportions: forty percent of Pinot noir and Chardonnay and 20% of Pinot are smaller.

Technology

Harvesting is done manually and very carefully so that the skin of the berry does not stain the juice. Squeeze is carried out immediately to ensure a light color and transparency of the future of champagne. Then in the oak barrels there is a vinification of the drink. This process takes about three years.

When wine is bottled, it goes through a stage of remembrance. Every day, the tank is turned just a few degrees to ensure that the entire sediment is collected on the plug. Then, three months later, the disgorage operation follows. The sediment is completely removed, and the champagne pleases us with amazing crystal clearness and transparency.
