Kvass from chicory and citric acid

A small blue flower growing on sunny forest edges and near the roadside, many have seen more than once. It is known to mankind since ancient times. It's a chicory. In Russia, the plant was cultivated and began to grow in the fields in the 19th century. It was used as a useful substitute for natural coffee or an additive to it, and lately kvass from chicory has gained increasing popularity.

What is kvass

This is one of the most healthy, healthy and nutritious drinks, made on the basis of sugary and mealy substances by alcohol and lactic fermentation. It is used as a quenching thirst. It is classified into the following varieties:

Classic Recipe

Ingredients:

- 1 tbsp. L. Citric acid;

- 30 g of yeast;

- 50 g of chicory;

- a liter can of granulated sugar;

- 10 liters of filtered water.

Preparation:

1. Yeasts are bred in warm water and together with the rest of the products are mixed in a large-volume container until the sugar dissolves completely.

2. For 3-4 hours the container is put in a warm place, after kvass from chicory and citric acid, strain and bottled.

3. "Ripen" bottles with kvass already in the refrigerator. Important: you should leave room for fermentation, i.e., do not top up with 5-7 cm.

Quick kvass

Ingredients:

- 100 g of pressed yeast;

- 2 whole lemon (2 tsp citric acid);

- 3 large spoons of chicory;

- 600 g of sugar;

- 10 liters of water.

Preparation:

1. All the ingredients are added to a large tank with warm filtered water.

2. Lemon is washed, crushed thoroughly (you can use a grater), wrapped in gauze and also falls into a container of water.

3. Put the container in a warm place for 3-4 hours. That much, no more and no less, must be infused with kvass from chicory. Both citric acid and dry yeast can be put optional: for additional acidity and strengthening the fermentation process, add them a little more.

4. Maturing of kvass at times increases in the bright sun, where you can take out the bottles for a short time, so as not to get a result of the brag.

5. After completion of all manipulations, we put kvass from chicory in the refrigerator, where it ripens much more slowly and is safely stored for a week.

Red kvass

Ingredients:

- 1 lemon and 1 tablespoon of citric acid;

- 10 drops of mint extract;

- 50 g of chicory;

- 400 g of sugar;

- 100 g of yeast;

- 5 liters of cooled boiled water.

Preparation is similar to the previous recipe:

1. Mix all the ingredients, add lemon, mint extract and the right amount of citric acid, pour water.

2. A distinctive feature of this recipe is that kvass from chicory here ripens already poured into bottles (do not top up them at least 5 cm), and then the tare is placed in the refrigerator.

3. Whether ripe kvass has ripened, it is possible to check up, having pressed on bottles a finger: if plastic does not be punched, means, the drink is ready. The next day it is already possible to drink a slightly sharp and tingling tongue of kvass from chicory. According to Bolotovu the drink is made a little differently.

Kvass from celandine

Preparation:

- 3 liters of whey;

- 1 tbsp. Herbs celandine;

- 250 g of sugar;

- 15 g of sour cream.

Preparation:

1. The celandine is placed in a gauze pouch (it is better to load, so that it does not come up), fit into a jar, top off sugar and pour the serum.

2. Sour cream is added to enhance the effect of fermentation.

3. The neck is covered with a clean cloth and for 2-3 weeks the bottle is removed into a dark warm place.

4. Further kvass is stored already in the refrigerator.

Herbal drinks Bolotova, like kvass from chicory, are useful for a number of reasons.
