Exotic jam from green walnuts: recipe

Who has ever tried jam from green walnuts, the recipe of which has come down to us from ancient times, says that this delicacy is just a fairy tale! And doctors say that there is no more dessert that is more useful in the amount of iodine. Let's try to cook this delicious dish. Do not be scared by the time it takes to complete the cooking process. This jam does not require much labor, as it seems at first glance. Just to fully prepare, nuts need a lot of time.

The ratio of products: green nuts - 100 pieces, sugar - 2 kg. Also cloves - about 20 buds, lemon. Cooking process:

  1. Peel the nuts from the upper skin.
  2. Place in cold water, which will need to be changed about 4 times a day. To sustain nuts in water two days.
  3. Make lime water: slaked lime (pound) pour water (5 liters). Stir and insist for 4 hours. Through the cheesecloth strain this solution. Nuts get their clean water and put in the lime mortar. Periodically mix nuts. To sustain their day in the calcareous water.

  4. Nuts are immersed in boiling sugar syrup and are brought to the boiling point. Then we cool the jam. The recipe assumes that this process will be repeated until the jam is ready: that is, until the syrup turns into a drop of a fixed shape.
