The weight of a hen's egg without a shell. Average weight of eggs of chicken

Purchasing eggs in grocery stores, people rarely look at their appearance. Usually this product is chosen by size. And did anyone wonder what weight eggs are chicken and how does it affect the rest of this product?

Labeling Rules

The egg bought in the store, as a rule, has a special stamp, which contains complete information about the product purchased. You just need to be able to read it correctly. Labeling is usually done in two ways:

1) The stamp shall be applied separately to the shell of each egg.

2) In case the product is sold in a special closed container, the information is indicated on the package. Usually it is a label that is glued in such a way that, when the box is opened, it must necessarily be broken. This serves as a guarantee that the packaging has not been re-used.

Most often, poultry farms try to label all their products without taking into account the type of subsequent packaging. Thus, the company tries to avoid possible misunderstandings and substitutions. Understanding the meaning of each symbol of the marking applied, any buyer can not only give a general description of the product, but also determine the weight of the eggs of chicken standing on the counter.

Information for the buyer

The simplest marking stamp contains two symbols. The first is the kind of egg, and it is denoted by the letter of the Russian alphabet, and the second is its size, and it is indicated conditionally in figures or letters. Now we need to understand how to determine the weight on all this symbolism. Eggs of chicken are many, and they are all different. You need to sort things out in order. The letter symbol in the stamp indicates the type of product. This is not just a conventional name. In accordance with it, the shelf life and the scope of production of poultry farms are established. Therefore, eggs are divided into the following types:

  1. Dietary ("D"). They are usually stored for no longer than 7 days. And the count is not from the date of manufacture, but from the date of sorting. This must be taken into account when buying in the store.
  2. Canteen ("C"). Their shelf life is 25 days.

Hence it can be concluded that the dietary egg differs from the dining room not by some special qualities. Simply the probability is greater that it is more fresh. This is an important indicator. It is even more important than the weight of eggs of chicken or any other. Perhaps, therefore, diet eggs are used for baby food. They can safely cook soft-boiled or used in confectionery production, for example, for the preparation of creams.

Weight categories of eggs

In addition to species, eggs are also divided into categories. There are only five:

  • The first (1);
  • The second (2);
  • The third (3);
  • Select (O);
  • The highest (B).

This indicator allows you to judge the size of the product. Therefore, knowing it, you can approximately determine the weight of 1 chicken egg. On average, it is about 50 grams. Data on the type, category and weight of chicken eggs can be summarized in a table.

Those who love cooking, should know that when writing recipes, specialists usually conditionally use eggs of the third category with an estimated weight of 40 grams. Making a purchase in the store, you can check the correctness of the displayed marking, using the control scales.

Ingredients of eggs

Each egg consists of three parts. The percentage of each of them in the product in percentage terms is as follows:

  • Protein - 58.5%;
  • Yolk - 30% ;;
  • Shell - 11.5%.

These indicators are approximately the same for eggs of all kinds and categories. Based on their above values, you can easily calculate the weight of a chicken without eggshell. For example, if the egg C1 weighs 60 grams, then its shell, respectively, - 7 grams, yolk - 20 grams, and protein - 33 grams. Usually such an indicator is not necessary, but sometimes it is indicated in some measures tables. In addition, some confectionery companies use melange to produce their products. It is a mixture of yolks and proteins without eggshell. In this case, knowing the weight of a particular batch of eggs, you can calculate how much melange from it can turn out. It is worth noting that the weight of the shell is absolutely independent of its color. Eggs can be white, beige, brown and even olive. By this characteristic, rather, it is possible to determine the breed of chicken that has taken down a particular egg.

Boiled product

Chicken eggs are usually used for food in raw, boiled and fried form. Boiled products are more often found in the daily diet of any person. Cooked eggs are eaten just like that or used to prepare a wide variety of dishes: snacks, salads and even soups. When composing recipes, specialists usually use the number of eggs in pieces, but sometimes it is necessary to have an idea of the ratio of the components of a complex dish in grams. Here, the need arises to know the weight of a boiled chicken egg. In this case, you should immediately refer to the above table. You just need to calculate the weight of protein and yolk without the outer shell. This is the required quantity. After all, eggs are cooked in the shell, as in a confined space, so any material losses in this case are virtually eliminated.

The averaged value

Two different eggs of the same category and species may have different weights. This is provided by the current standard. But if it is a question of large batches, the permissible deviations in grams are not taken into account. In calculation, only the mean value, that is, the average weight of the egg of chicken, is taken. For example, a dietary egg of the second category should weigh from 45 to 55 grams. Consequently, the average weight of such eggs in a batch is considered equal to 50 grams. In practice, and it turns out. There are both larger and smaller eggs. If you set a goal and weigh, for example, one hundred eggs of the same marking, and then divide the obtained value by the total amount, then the result will be the weight of 1 egg, which is equal to the average value approved by GOST. Some manufacturers for the expansion of the assortment give ordinary eggs additional properties: they enrich them with selenium or iodine, they achieve bright yolk color. In any case, the average weight value is determined based on the category and type of products produced.
