In its consistency Catalan cream is similar to the French cream-brule. However, it is prepared using milk, not cream.

To do this, we need the following ingredients: 450 ml of milk (2.5% fat), four eggs, two tablespoons of potato starch, a glass of sugar, a bag of vanillin and one lemon. Instructions

To begin with, remove the lemon peel. It is most convenient to do this with a grater. The resulting zest is covered in milk. We put on the plate and heat up to 50 degrees. Separate the yolks from proteins. The first lay out in a separate bowl. We do not need proteins, so they can be used to prepare another dish. So, pour out the sugar to the yolks and whisk until white foam forms. This is most conveniently done with a mixer.

Then add starch and warm milk to the beaten yolks. Stir and send to the stove. Cook the mixture on a low heat. It is necessary to constantly stir the cream. When the mass thickens, add vanillin. Again, mix thoroughly.

To prepare mashed potatoes we will need the following ingredients: a pound of apples and 50 grams of sugar. We will cook the cream from such products as: 400 ml of milk, 75 grams of sugar, five egg yolks, peels from one lemon and one lime and cinnamon sticks.

Cooking process

First, we'll mash. Apples are cleaned and cut into halves. We put them on a baking sheet and send it to a preheated oven to 180 degrees. After that, we make mashed potatoes, add sugar and filter.

Now we need to prepare the Catalan cream, which is the main part of this dessert. To do this, pour the milk into the saucepan, cover the sugar and mix it. After this, add whipped egg yolks, lemon and lime peel, cinnamon. Stir and start to heat. Fire must be weak. Cook the cream until thick, not forgetting to stir constantly. After that, we cool the mass and put it in the culinary siphon. Shake and shake in the refrigerator for at least one hour.
