Festive appetizer - liver cake

As a rule, when it comes to a cake, everyone imagines a dessert dish with cream. But today snack cakes are becoming more popular , which are made from dough, vegetables and even meat products. An example of such a beautiful and very tasty snack can serve as a liver cake.

This dish can be made from different types of liver - beef, chicken, pork, turkey liver. In any case, it will turn out delicious, but will have a different structure. When using the liver, the pies of the cake will be more homogeneous, and from the beef liver "pancakes" will turn out to be more granular.

So, let's start making a liver cake. We need half a kilogram of liver, two eggs, half a glass of milk, a glass or slightly less flour, a bulb, spices and, of course, salt. These are the products that will go to make cake cakes, and we'll talk about preparing a cream for him later.

The liver is cleaned of films and vessels and grinded in a blender or in a meat grinder using a fine grate. When using a large grate, it is desirable to turn the liver through a meat grinder twice. Such a thorough shredding will make the taste of the cake more tender.

We beat eggs with milk and send this mixture to a bowl with a liver. Mix well and begin to gradually pour in the flour, preventing the formation of lumps. It is necessary to closely monitor the consistency of the mixture, it should resemble a dough for baking pancakes. If you overdo it with flour, and the liver mass is too thick, then dilute it with milk.

Now we season our billet with salt and other spices. Cut the onions very finely and fry it in vegetable oil until soft. Then add the onion together with the oil to the hepatic mass. The addition of onion will not only make our liver cake tastier, but it will also facilitate baking cakes, since the butter in the dough will make it easier to turn over and take off the "pancakes".

Bake cakes from the liver "dough" is best in a frying pan with non-stick coating. Before baking, the frying pan should be lightly oiled and heated. Spread the dough with a spoon (depending on the size of the frying pan, it can take from two to five spoons of hepatic mass per one cake) and level it. Furnace liver pancakes should be on moderate fire, so that they are better roasted. After the underside is browned, pancake carefully turn with a spatula. We remove the prepared cake from the frying pan and spread it on a paper towel to remove excess fat. So we bake all the cakes. By the way, if you have pans of different diameters in your household, then the hepatic cake can be made multilevel, in the form of a cone.

So, the cakes are ready, you can start preparing the cream. A lot of options are possible. For example, a filling of fried onions and carrots with the addition of mayonnaise is often used. Or a cream consisting of grated cheese, finely crushed boiled egg, garlic and the same mayonnaise. You can use the simplest cream, prepared from a mixture of mayonnaise and ketchup.

But these are all very fatty and "heavy" for the stomach fillings options. If you do not like mayonnaise or want a cooked snack to be less caloric, then it is worth preparing a light cream of sour cream and cucumbers.

We need two or three fresh cucumbers, about three hundred grams of sour cream, three large cloves of garlic and a large bunch of greens.

Let's start cooking. Cut cucumbers into small straws. You can, of course, rub them on a grater, but then the vegetables will give a lot of juice, and it will need to be wrung out. We also cut the greens very finely, and chop the garlic with the help of a press. Mix everything with sour cream, and for the sake of sharpness, add a little soy sauce and lemon juice. The cream is ready.

We start to collect our cake, laying out the cakes on a dish and well spreading them with cream. Ready cake should be given a little to stand in the refrigerator so that it has time to soak.

Now you know how to cook a hepatic cake. But how to decorate this dish, you can decide on your own. You can simply sprinkle the upper cake with greens or grated cheese, or you can cut flowers and other ornaments from vegetables to turn our snack dish into a real culinary masterpiece.
