Borshevik Siberian - grass picany
Is there anyone among gourmets and lovers of exotic dishes who refuse from a simple Ukrainian borsch? I think no. This dish has firmly won the hearts of the Slavic peoples for their taste and unusual brightness of colors. However, few people wondered why borsch is so called. This dish is known since the 18th century, and the main ingredient of it, besides vegetables, was a borsch plant, young shoots which were harvested in the spring in the woods.
Description
The plant of picans (cow's) is owned by the Umbrella family. This is a truly gigantic grass, sometimes reaching a height of more than three meters. No wonder the plant is named after the hero of the ancient Hellas of Heracles - Herácléum. From the side it resembles a mixture of burdock with riddled leaves and huge umbrellas of dill. The stalk of the cowweed is powerful, branched. Huge picany leaves cut into five large lobes (the grass was known as "bear paw" - by analogy with their appearance) reach sizes of up to 25 cm in diameter. Above they are glabrous and smooth, beneath - slightly pubescent, rough. The root is thick, straight. The grass of the picas blossoms from the middle of summer until the fall. White small five-petalled flowers are collected in complex umbrellas.
Application
In the beginning of summer, when the greenery of the plant is still young, it is used in the preparation of salads, cooking soups. The stem of a young cowworm after cleansing from a rough hairy skin can be eaten raw. He is very fond of children - this is the first green after a long winter. The taste of crispy stems is unusual - juicy, slightly sourish. Because of its high taste qualities, the grass of picans is often grown on household plots. Soups made from young nettles and hogweed leaves not only saturate the body, tired of colds, with vitamins, they help get rid of the depression accumulated during short winter days. The chemical composition of the plant is very rich. It contains sucrose, coumarins, anthocyanins, essential oils, polyacetylene compounds and umbelliferosis.
Medicine
Pikan (borshchevik) is widely used in folk medicine for the treatment of diarrhea, and also as a choleretic, analgesic. Despite the fact that the leaves of an adult plant cause burns and huge furuncles and can not be touched with their bare hands, the infusions from this herb are an excellent remedy for the treatment of dermatitis. In addition, decoctions of borshevik apply for neuroses and epilepsy. For the manufacture of medicines, both leaves and grass roots are suitable. When collecting this plant, you need to take precautions (as already mentioned above). The leaves of the plant are dried in a thin layer in a well-ventilated room. They are constantly turned over, otherwise they can bend.
